Omani Steamed Meat
Vinegar-Bezar lamb steamed in food-grade banana leaves above a measured water chamber.

Preparation: 25 min · Cooking: 2 hr · Total: 5 hr · 2 servings
Ingredients
- 500 g RAW bone-in lamb shoulder, 4 cm pieces
- 4 cloves Garlic cloves, crushed
- 50 ml Food-grade distilled white vinegar, 5% acidity
- 1 tbsp Commercial food-grade Omani Bezar blend; check label
- 0.5 tsp Salt
- Food-grade banana-leaf sheets, approximately 30 × 30 cm each — 2
- 1500 ml Initial LOWER steamer water, discarded after cooking
- 1000 ml Boiling-water reserve for lower chamber, maximum (optional)
Instructions
Make the measured marinade
Mix crushed garlic, 50 ml distilled white vinegar at 5% acidity, Bezar and salt. Rub over the chilled 4 cm bone-in lamb pieces using clean utensils. Use food-grade vinegar, not concentrated 12% or 24% cleaning/pickling acid.
Marinate in the refrigerator
Cover and marinate for 2 hours at 4°C or colder. Keep the raw-meat bowl away from ready-to-eat foods. Clean hands, work surfaces and utensils after raw-meat contact.
Refrigerated lamb marinade: 7200 seconds
Arrange a proper steamer
Use a manufacturer-suitable basket or trivet ABOVE the lower water chamber. Measure 1500 ml initial water only if it respects the unit’s fill limits and cannot touch the food; stop if this setup cannot fit safely. Wash food-grade banana leaves per supplier directions and leave paths for circulating steam.
Load the basket and start steam
Line the basket with one leaf, arrange lamb loosely in one layer and lay the second leaf loosely over it. Do not block steam or seal the basket airtight. Bring the lower water to a boil under a normal fitted lid, checking the steam from 10 minutes.
Steamer startup first check: 600 seconds
Maintain steam and check water
Maintain a gentle steaming simmer and first check meat from 1 hour 45 minutes. Check the lower water safely at intervals, opening steam away from the face. Add only the measured boiling reserve as needed; never dry-boil, use a pressure seal or cook on a dry leaf-lined pot floor.
Lamb steaming first check: 6300 seconds
Check temperature and tenderness
Probe thickest lamb flesh away from bone: at least 63°C followed by a 3-minute rest. Continue steaming as needed for fork-tender shoulder; reaching the minimum does not guarantee tenderness. Move cooked meat only with clean utensils.
Lamb minimum rest: 180 seconds
Remove leaves and discard lower water
Lift lamb safely onto a clean serving plate and remove inedible leaves. Discard lower-chamber water after it is safe to handle: it collected raw drippings and is not ready-to-eat stock. Rice is a separate accompaniment, not part of this measured meat recipe.
Serve and store promptly
Refrigerate promptly in shallow containers at 4°C or colder for at most 2 days, or an earlier ingredient/package deadline. Do not wait for complete counter cooling. Assembly does not reset older component storage times.
Tips
- Base amounts make 2 catalogue shares, separate from piece yields. For 1 share halve every measured food, garnish and process-water allowance; for 8 shares multiply by 4. Do not multiply cooking time, temperature, bread thickness or pot depth: use suitable comparable vessels or successive base-size batches. Cup 240 ml, tbsp 15 ml, tsp 5 ml. Follow actual product cooking and allergen labels. Never taste raw flour, dough or batter; fully cook all centres.
Common mistakes
- Do not rely on a fixed timer or surface colour alone; use the stated doneness checks and measured allocations.
Substitutions
- Use the specified ingredient states and equipment; reconcile a different product before altering its liquid or cooking method.
Storage
Refrigerate promptly in shallow containers at 4°C or colder for at most 2 days, or an earlier ingredient/package deadline. Do not wait for complete counter cooling. Assembly does not reset older component storage times.
Reheating
Reheat leftovers only once to 74°C throughout, stirring where practical. Follow the earlier ingredient deadline; never reheat temperature-abused food to rescue it.
