Emirati Mint Laban
Cold pasteurized cultured laban blended with fresh mint and measured salt.

Preparation: 10 min · Cooking: 0 min · Total: 10 min · 4 servings
Ingredients
- 100 ml cold drinking water
- 5 g salt
- ice cubes made from drinking water — 4
- 1000 ml pasteurized cultured laban, cold — Split one fifth for mint blending and four fifths for finishing: 200/800 ml base, 800/3200 ml fourfold. Not raw milk or the former yogurt recipe.
- 50 g fresh mint leaves, stems removed
Instructions
Prep Herbs
Thoroughly wash the fresh mint leaves under running water to clear field debris. Shake dry. (Washing clears debris but does not sanitize).
Pulverize Base
In a blender, combine the 200 ml blending Laban allocation, 100 ml cold water, 50 g mint leaves, and 5 g salt. Blend on high for 1 minute until the mint is completely pulverized and incorporated.
Blend the mint base: 60 seconds
Mix & Froth
Pour in the remaining 800 ml finish Laban allocation and ice cubes. Blend on high for 30 seconds until uniform and heavily frothed. Serve cold.
Froth the cold drink: 30 seconds
Check cold texture
Taste with a clean spoon after blending: the drink should be evenly mixed and pourable. The measured salt is 5 g per base batch, not an assumed spoon conversion. Keep all components cold at or below 4°C and blend large yields in batches within the blender capacity.
Serve cold and refrigerate
Pour into clean chilled glasses and serve immediately. Keep unused drink covered in the refrigerator at or below 4°C and use within 24 hours. Stir again if it separates; do not use sour smell alone to judge safety.
Tips
- Selected ingredient amounts govern scaling; numbers in the method describe the base batch. Use more comparable pans or cooking batches for large yields, not one deeper pan or multiplied timers. Timers remind you to check readiness and do not certify it.
Common mistakes
- Do not treat a timer or surface colour as proof of cooked centres; inspect the stated texture and temperature where applicable.
Substitutions
- Keep the approved master ingredients and allocations; alternatives may need a different method or quantity. Optional garnishes may be omitted.
Storage
Keep covered at or below 4°C; serve cold and use within 24 hours. Stir if separated.
Reheating
Serve cold; do not leave the dairy drink warm on the counter.
