Kubba Laban
Fresh chilled uncooked beef/lamb pockets simmered in pasteurized yogurt.

Preparation: 10 min · Cooking: 25 min · Total: 40 min · 2 servings
Ingredients
- 480 ml Pasteurized plain whole-milk yogurt
- 2 cloves Garlic, minced
- 1 tbsp Dried mint
- Prepared fresh refrigerated uncooked beef/lamb-filled Kubba pockets suitable for simmering — 6
- 240 ml Cold sauce water
- 1 tbsp Cornstarch
- 1 tbsp Ghee
- Salt, to taste
Instructions
Check the prepared pockets
Choose fresh refrigerated uncooked beef/lamb-filled pockets with rice or bulgur shells suitable for simmering in sauce. Check package ingredients, allergens and cooking directions; use a compatible product, not frozen, fried or poultry-filled substitutes. Keep chilled until needed.
Whisk the cold sauce
Whisk the cold pasteurized yogurt, measured cold water, cornstarch and salt until smooth. This recipe uses six prepared pockets for two servings, not an unprovided scratch shell/filling formula.
Heat gently while stirring
Heat over controlled medium heat with gentle continuous stirring until a gentle simmer forms. Smooth texture is a preference, not proof that raw pockets are cooked.
Add pockets and simmer thoroughly
Lower pockets carefully into the simmering sauce in manageable batches. Begin checks around 15–18 minutes and follow compatible package directions. Verify 74°C in filling centres and fully cooked shells/starch; floating alone is insufficient.
Add pockets and simmer thoroughly: 900 seconds
Warm the measured ghee
Melt the one measured ghee allowance in a separate small skillet over medium heat.
Soften garlic without burning
Add minced garlic and cook over medium heat, checking from about 1 minute until fragrant without burning.
Soften garlic without burning: 60 seconds
Add mint briefly
Stir dried mint into the warm garlic ghee from about 10 seconds, then remove from heat. This is a fragrance check, not a validated safety treatment.
Add mint briefly: 10 seconds
Combine gently and serve
Let bubbling subside, then fold the seasoning gently into the sauce close to its surface, away from your face. Avoid hot-fat splashing; serve fully cooked pockets immediately with their sauce.
Store safely
Cool promptly in shallow portions and refrigerate, aiming within 1 hour, at 4°C or colder. Use within 24 hours. This is a selected conservative household limit, not a validated shelf life. Follow any shorter product use-by limit; keep cream separate until serving where possible.
Tips
- Cup = 240 ml, tbsp = 15 ml and tsp = 5 ml. Ingredient amounts scale exactly; instruction amounts describe the base 2 servings. Use compatible equipment and manageable batches; times are first checks, not readiness guarantees.
Common mistakes
- Do not restore ingredients from an older draft or count process water, frying media, prepared syrup and conditional additions as a fixed consumed yield. Keep raw foods separate from ready-to-eat food.
Substitutions
- Only explicitly listed alternatives are included. Follow prepared-product labels; do not substitute unknown-acidity vinegar, unpasteurized dairy or a different raw/frozen pocket process.

Reheating
Reheat only the portion needed, at most once, to 74°C throughout. Rice leftovers must have been cooled promptly and used within 24 hours; do not repeatedly rewarm cream-topped pastry.
