Omani Ragag Bread
Plain thin griddle wafers spread only with a long-handled heat-rated utensil.

Preparation: 10 min · Cooking: 15 min · Total: 55 min · 2 servings
Ingredients
- 200 g All-purpose wheat flour, for the dough
- 170 ml Initial dough water
- 0.5 tsp Salt
- 50 ml Additional water for utensil spreading, maximum (optional)
Instructions
Mix the sticky dough
Mix flour, salt and the initial 170 ml water until evenly sticky. This is a wet dough, not a promise of freely pouring batter. Never taste raw flour or dough and keep raw-flour tools separate from cooked bread.
Rest covered
Rest covered for 20 minutes. Prepare a stable flat griddle rated for stovetop use and a long-handled heat-rated spreader. No damp-hand swiping, hot cloth pressing or dough held in the hand against the pan is used.
Covered dough rest: 1200 seconds
Adjust for safe utensil spreading
Add only the measured 50 ml reserve gradually if needed for utensil spreading. Divide the actual base mixture into 6 equal portions; half makes 3 wafers and fourfold makes 24. If this allowance cannot make a safely spreadable thin layer with your equipment, stop rather than use fingers or unlimited water.
Spread one very thin layer
Warm the griddle on medium heat so bread can cook before scorching. Use only the long-handled heat-rated spreader to smear one portion into a very thin layer. Keep fingers, hands and face away from the hot plate.
Thin-layer first check: 45 seconds
Cook the whole wafer through
Check from 45 seconds and continue until the top and centre are dry and completely cooked and the edges lift. One-sided cooking is acceptable only if that very thin layer is cooked through. A fixed timer or browned edge alone is not enough.
Complete-wafer first check: 45 seconds
Lift with a long-handled spatula
Lift the dry cooked wafer with a long-handled heat-rated spatula. Place it separately on a clean rack until steam has escaped. Continue with the remaining portions at the same thinness; do not touch the hot metal.
Cool before packing
Serve the wafers plain with no unlisted cheese, honey, sesame or ghee. Wait until steam has escaped before packing; do not seal hot bread in an airtight box. Refrigerated bread may need re-crisping and is not guaranteed to remain crisp.
Serve and store promptly
Refrigerate promptly in shallow containers at 4°C or colder for at most 2 days, or an earlier ingredient/package deadline. Do not wait for complete counter cooling. Assembly does not reset older component storage times.
Tips
- Base amounts make 2 catalogue shares, separate from piece yields. For 1 share halve every measured food, garnish and process-water allowance; for 8 shares multiply by 4. Do not multiply cooking time, temperature, bread thickness or pot depth: use suitable comparable vessels or successive base-size batches. Cup 240 ml, tbsp 15 ml, tsp 5 ml. Follow actual product cooking and allergen labels. Never taste raw flour, dough or batter; fully cook all centres.
Common mistakes
- Do not rely on a fixed timer or surface colour alone; use the stated doneness checks and measured allocations.
Substitutions
- Use the specified ingredient states and equipment; reconcile a different product before altering its liquid or cooking method.
Storage
Refrigerate promptly in shallow containers at 4°C or colder for at most 2 days, or an earlier ingredient/package deadline. Do not wait for complete counter cooling. Assembly does not reset older component storage times.
Reheating
Reheat leftovers only once to 74°C throughout, stirring where practical. Follow the earlier ingredient deadline; never reheat temperature-abused food to rescue it.
