Emirati Khubz al Tawa
Unleavened layered flatbreads with one divided ghee allowance.

Preparation: 25 min · Cooking: 20 min · Total: 1 hr 25 min · 6 servings
Ingredients
- 300 g ordinary wheat flour
- 165 ml warm dough water
- 0.5 tsp salt
- 45 g ghee — One total: 5 g coating/work surface + 20 g folding + 20 g cooking. Fourfold: 20 + 80 + 80 g. Divide each allocation across the selected bread count.
Instructions
Weigh and divide all the ghee
Divide the measured ghee before starting: base 5 g coating, 20 g folding and 20 g cooking; fourfold 20 g, 80 g and 80 g. These replace the conflicting per-bread teaspoons; do not add extra measured fat.
Knead
Dissolve salt in warm water, add flour, and knead for 8–10 minutes into an elastic dough. Divide into 6 equal balls. Coat the work surface and balls using the coating ghee allocation. Cover and rest for 30 minutes. (Do not taste raw dough).
Check relaxed dough: 1800 seconds
Laminate & Fold
Roll out a ball paper-thin. Spread a fraction of the folding ghee allocation over it. Fold the sides inward to create a tight square envelope. Repeat for all and rest for 10 minutes. Roll each square flat to a thickness of 3 mm.
Rest folded envelopes: 600 seconds
Heat the griddle
Heat a dry griddle or non-stick pan over medium-high heat. Keep the cooking ghee portion ready and work in uncrowded batches so each flatbread lies flat.
Cook
Heat a griddle over medium-high heat. Cook the flatbread for 1–2 minutes until air bubbles rise. Flip, brush with a portion of the cooking ghee allocation, and cook for 1 minute while pressing with a spatula. Verify layers are dry and flaky.
Check first side before turning: 60 seconds
Verify every inner layer
Check the centre of a test bread: layers must be dry, flaky and fully cooked, not raw or gummy. Cook longer over adjusted heat if needed; surface spots and elapsed minutes are not proof of cooked flour.
Serve the selected bread count
Serve hot: six flatbreads at base yield, twenty-four at fourfold yield. Divide the same complete ghee allowance across every bread; larger batches require more pan batches, not extra teaspoons per bread.
Chill leftovers promptly
Divide leftovers promptly into small shallow containers and refrigerate within 1 hour at or below 4°C. Use within 2 days. Do not wait for a whole deep pot or tray to reach room temperature.
Tips
- Selected ingredient amounts govern scaling; numbers in the method describe the base batch. Use more comparable pans or cooking batches for large yields, not one deeper pan or multiplied timers. Timers remind you to check readiness and do not certify it.
Common mistakes
- Do not treat a timer or surface colour as proof of cooked centres; inspect the stated texture and temperature where applicable.
Substitutions
- Keep the approved master ingredients and allocations; alternatives may need a different method or quantity. Optional garnishes may be omitted.
Storage
Divide leftovers promptly into small shallow containers and refrigerate within 1 hour at or below 4°C. Use within 2 days. Do not wait for a whole deep pot or tray to reach room temperature.
Reheating
If reheating, heat only the portion needed, at most once, to 74°C throughout, including solid and bread centres. Stir or turn and thermometer-check several places. Discard reheated leftovers; reheating cannot repair improper storage.
