Omani Khabeesa
Wet-cooked toasted wheat flour with sugar, ghee, saffron rosewater and ready-to-eat roasted cashews.

Preparation: 10 min · Cooking: 25 min · Total: 45 min · 2 servings
Ingredients
- 60 ml Ghee, total measured allocation
- 0.5 tsp Ground cardamom
- 0.25 tsp Crushed saffron threads
- 200 g All-purpose wheat flour for wet cooking
- 100 g Granulated sugar
- 200 ml Cooking water
- 60 ml Hot-water cooking reserve, maximum (optional)
- 30 ml Food-grade rosewater for saffron infusion
- 20 g Ready-to-eat dry-roasted unsalted cashews
Instructions
Measure and infuse saffron
Infuse the measured saffron in all 30 ml rosewater. Confirm cashews are commercially ready-to-eat and keep them separate from raw flour tools. Do not taste raw flour; dry toasting alone is not ready-to-eat treatment.
Toast gently and sift
Toast flour in a dry pan on medium-low heat, stirring from an 8-minute first check until lightly golden and nutty. Discard scorched flour. Sift into a clean heatproof bowl; it still needs wet cooking.
Flour toasting first check: 480 seconds
Dissolve sugar and add ghee
Heat sugar with the measured 200 ml water until fully dissolved. Lower the heat, then stir in all 60 ml ghee and cardamom. Use long-handled utensils and keep away from hot syrup splashes.
Whisk in flour and wet-cook
Take the pot briefly off direct heat and whisk flour into the syrup gradually. Return to low heat and cook with continuous bottom scraping from a 6-minute first check. Add only the measured reserve as needed to prevent a dry, uncooked paste.
Wet flour cooking first check: 360 seconds
Add infusion and cook gently
Stir in all saffron rosewater. Cover with a normal fitted lid on very low heat and check from 5 minutes, stirring at intervals to prevent scorching. Follow stricter flour-product directions and continue until fully cooked, not merely browned.
Gentle cooking first check: 300 seconds
Check the soft crumble
Remove from low heat when the hydrated flour is completely cooked and the mixture forms a soft crumble. Fluff carefully with a fork while avoiding steam. Do not judge cookedness from the toasted colour alone.
Garnish with ready-to-eat nuts
Divide warm khabeesa into shallow bowls and scatter the measured 20 g ready-to-eat cashews over them. No additional frying oil or unlisted nut topping is used. Serve warm at a comfortable temperature.
Serve and store promptly
Refrigerate promptly in shallow containers at 4°C or colder for at most 2 days, or an earlier ingredient/package deadline. Do not wait for complete counter cooling. Assembly does not reset older component storage times.
Tips
- Base amounts make 2 catalogue shares, separate from piece yields. For 1 share halve every measured food, garnish and process-water allowance; for 8 shares multiply by 4. Do not multiply cooking time, temperature, bread thickness or pot depth: use suitable comparable vessels or successive base-size batches. Cup 240 ml, tbsp 15 ml, tsp 5 ml. Follow actual product cooking and allergen labels. Never taste raw flour, dough or batter; fully cook all centres.
Common mistakes
- Do not rely on a fixed timer or surface colour alone; use the stated doneness checks and measured allocations.
Substitutions
- Use the specified ingredient states and equipment; reconcile a different product before altering its liquid or cooking method.
Storage
Refrigerate promptly in shallow containers at 4°C or colder for at most 2 days, or an earlier ingredient/package deadline. Do not wait for complete counter cooling. Assembly does not reset older component storage times.
Reheating
Reheat leftovers only once to 74°C throughout, stirring where practical. Follow the earlier ingredient deadline; never reheat temperature-abused food to rescue it.
