Kaleh Joosh with Mint and Walnut

Preparation: 10 min · Cooking: 20 min · Total: 30 min · 2 servings

Ingredients

Instructions

  1. Prepare specified kashk

Check the pasteurized spoonable kashk label for required preparation, heating and use-by. Measure 240 ml of this specified product and mix smooth with the separate 240 ml water, a defined 1:1 dilution. Thin already-diluted drinking kashk, plain whey and raw homemade kashk are not equivalent substitutes.

  2. Cook onion and garlic

Sauté chopped onion and garlic in only their reserved 0.75 tbsp butter over controlled medium-low heat from 5 minutes until soft and fragrant, not burnt. Keep the other 0.25 tbsp butter for mint.

Cook onion and garlic: 300 seconds

  3. Warm walnuts

Add all 120 ml coarsely chopped walnuts to the onion mixture and gently toast together from 2 minutes, stirring to prevent burning. This is a volume measure, not an invented 120 g equivalence.

    Warm walnuts: 120 seconds

  4. Bloom mint briefly

In suitable small cookware, warm mint and turmeric in only reserved 0.25 tbsp butter over gentle heat from 10–30 seconds until fragrant, not blackened. Remove from heat before burning and combine with the onion-walnut mixture. Total butter stays 1 tbsp.

    Bloom mint briefly: 10 seconds

  5. Heat according to label

Add the smooth measured kashk-water mixture to the pot and heat gently, stirring. Simmer from 10 minutes for texture, but fulfil actual label thermal requirements, including a separate required heating stage if needed. A rule never to boil must NOT override required treatment. Do not guarantee completion under 20 minutes.

Heat according to label: 600 seconds

  6. Season after heating

After all label-required heating is complete, taste with a clean spoon and add only optional listed salt if needed; prepared dairy may already be salty. The soup should be hot and smoothly combined, without a promise all brands behave identically.

  7. Serve over separate bread

Tear the measured 100 g ready-to-eat flatbread into serving bowls only at serving, then ladle hot soup over it or serve it alongside. Use clean tools; do not boil all bread into the stored soup.

  8. Store soup without soaked bread

Chill soup promptly in shallow portions within 2 hours, or 1 hour in hot conditions, at 4°C or colder for selected 24 hours or shorter label instructions. Store dry bread separately and add fresh portions only at serving; reheat soup once to 74°C throughout.

Storage

Chill promptly in shallow portions within 2 hours (1 hour in hot conditions), at 4°C or colder; selected household limit 24 hours, or any shorter label/use-by limit. Cool rice ideally within 1 hour and use within 24 hours. Keep bread/garnishes separate. This is not a validated shelf life; reheating cannot rescue mishandling.

Reheating

Reheat only once to 74°C throughout, steaming hot, checking several places. Reheat only the needed portion and add only a measured amount of water if necessary. Add separate ready-to-eat garnishes with clean tools.
