  1. Wash and measure the fruit

    Wash the passion fruits before cutting them. Scoop out 250 g fresh pulp with seeds into a bowl; weigh the pulp and seeds, not the skins.

  2. Make and cool the syrup

    Put 150 ml of the measured 750 ml drinking water and 60 g granulated sugar in a small saucepan. Stir over medium-low heat for about 3 minutes until the sugar dissolves; do not boil hard. Remove from the heat and let cool for about 10 minutes. Keep the remaining 600 ml water cold.

  3. Strain the passion fruit

    Stir the 250 g pulp with 50 ml of the reserved cold water. Pour it through a fine sieve into a jug and press gently with a spoon to extract the juice. Discard the seeds; do not grind them.

  4. Mix the juice

    Add the cooled syrup, the remaining 550 ml cold water, and 15 ml fresh lime juice to the strained passion-fruit juice. Stir until evenly mixed; it should taste tart and sweet, with no loose seeds.

  5. Serve over ice

    Put two of the 8 clean ice cubes made from drinking water in each of four glasses. Stir the juice again, pour it evenly over the ice, and serve cold. Refrigerate any remainder promptly.

Cover and refrigerate at 4°C or below; use within 24 hours. Discard if left unrefrigerated for more than 2 hours, or 1 hour above 32°C.

Do not reheat; serve this juice chilled. Stir refrigerated leftovers before serving.
