Ingredients

Instructions

  1. Bloom saffron

Lightly crush all 0.25 tsp dry saffron threads with the listed pinch of sugar and infuse in all 45 ml hot water for about 10 minutes. Cool safely before raw chicken contact. This whole infusion is divided, not doubled.

    Bloom saffron: 600 seconds

  2. Reserve CLEAN finish first

Before ANY raw chicken, marinade or raw-contact tools touch it, measure 15 ml infusion into a clean covered container for finishing butter; the other 30 ml is for chicken. Half: 7.5 ml clean + 15 ml marinade; fourfold: 60 ml clean + 120 ml marinade. Keep the clean portion protected and refrigerated at 4°C or colder.

  3. Cut chicken safely

Keep raw chicken at 4°C or colder until preparation. Cut similar medium cubes using a dedicated board and tools. Do not wash raw poultry; wash hands and sanitize contact surfaces before touching ready-to-eat food.

  4. Coat with marinade infusion only

Toss raw chicken with ONLY the remaining 30 ml base saffron infusion. Do not take any from the clean 15 ml finishing portion. Yellow colour is flavour/appearance, not a pathogen-kill or doneness test.

  5. Marinate refrigerated

Combine saffron-coated chicken with sliced onion, all measured pasteurized yogurt, lemon juice, vegetable oil and seasoning. Cover and refrigerate at 4°C or colder for at least 4 hours, selected preparation maximum 24 hours within use-by limits. Lemon and yogurt do not make raw poultry safe.

    Marinate refrigerated: 14400 seconds

  6. Skewer and discard raw marinade

Thread similar chicken pieces on rated food-contact skewers, in manageable batches. Discard all raw-contact marinade and onion; never use them as cooked-food sauce or finishing brush. Keep waiting raw chicken cold and use separate clean serving tools.

  7. Prepare safe grill heat

Use a rated grill pan according to manufacturer instructions OR an appropriate outdoor charcoal barbecue over controlled coals without active flames. Never burn charcoal indoors, in a garage or under an indoor hood. Do not overheat empty cookware or expose handles/tools to flame. The following cooking stage checks chicken centres at 74°C; grill heat alone does not establish doneness.

  8. Grill to verified doneness

Grill in batches, turning, and start checks at 8–12 minutes. Continue until thickest cubes reach 74°C with a clean thermometer in several pieces. Do not rely on yellow marinade, browned surfaces, clear juices or timer alone.

Grill to verified doneness: 480 seconds

  9. Prepare CLEAN saffron butter

Gently melt all listed 1 tbsp butter in a clean pan and mix with ONLY the clean reserved 15 ml infusion, using a clean brush/spoon. Half uses 0.5 tbsp butter + 7.5 ml; fourfold 4 tbsp + 60 ml. No raw-contact liquid and no second saffron dose are used.

  10. Brush cooked chicken and serve

On a clean serving plate, brush the verified 74°C chicken with the clean saffron butter and serve promptly. Keep clean finish away from raw skewers/tools. Chill leftovers rapidly at 4°C or colder for selected 24 hours and reheat once to 74°C throughout.

Storage

Chill promptly in shallow portions within 2 hours (1 hour in hot conditions), at 4°C or colder; selected household limit 24 hours, or any shorter label/use-by limit. Cool rice ideally within 1 hour and use within 24 hours. Keep bread/garnishes separate. This is not a validated shelf life; reheating cannot rescue mishandling.

Reheating

Reheat only once to 74°C throughout, steaming hot, checking several places. Reheat only the needed portion and add only a measured amount of water if necessary. Add separate ready-to-eat garnishes with clean tools.
