Instructions
Read the mercury warning
Mercury advisory: FDA/EPA advise children, pregnant or breastfeeding people, and those who may become pregnant to avoid shark because of high mercury levels. Cooking, boiling and cleaning do not remove mercury. Small shark is not an exemption. Keep raw fish chilled at or below 4°C until needed.
Parboil the shark
Place the raw shark in the measured parboiling water with two thirds of the turmeric. Bring to a boil, then cook over medium heat about 15–20 minutes until the flesh softens. Drain and discard all water; boiling does not remove mercury or rescue spoiled fish.
Remove skin and cartilage; flake
Let the drained fish cool only briefly until it can be handled safely, then use clean forks or tools to remove all skin and cartilage. Flake finely and continue cooking promptly; do not leave the whole batch on the counter to cool for a long time.
Sauté the aromatics
Heat the ghee in a wide clean pan over medium heat. Sauté the onions, garlic and ginger until soft and translucent, stirring so the garlic does not burn.
Dry-fry with the remaining spices
Add the flaked shark, all the Bezar, the remaining third of turmeric, ground loomi and salt. Stir-fry over medium heat for about 10 minutes until dry and crumbly. Add the chopped coriander during the final 2 minutes of those 10 minutes, not an extra cooking period.
Finish ten-minute stir-fry: 600 seconds
Verify the fish mixture
Check several places at the centre of the flaked fish with a food thermometer: at least 63°C (145°F), fully cooked throughout. Continue cooking if needed. This temperature controls cooking, not mercury contamination.
Serve hot with an optional rice side
Serve the spiced fish hot. Separately prepared white rice is an optional accompaniment and is not included in the measured ingredients; handle any rice leftovers as carefully as the fish.
Chill leftovers rapidly
Divide leftovers into shallow containers and refrigerate promptly within 1 hour at or below 4°C. Use within 24 hours.
Tips
- Ingredient amounts follow the selected yield; numeric examples in the method describe the base batch. Use a suitably sized pot or separate comparable pans for larger batches. Timers are readiness-check reminders, not safety guarantees, and do not multiply with portions.
- Mercury advisory: FDA/EPA advise children, pregnant or breastfeeding people, and those who may become pregnant to avoid shark because of high mercury levels. Cooking, boiling and cleaning do not remove mercury. Small shark is not an exemption. Keep raw fish chilled at or below 4°C until needed.
Common mistakes
- Do not treat the stated time as proof of doneness; check the texture and any required thermometer reading.
Substitutions
- This is a shark recipe, not a mercury-safe substitute recommendation. People covered by the warning should avoid shark; changing the cooking method does not remove mercury.
Storage
Divide leftovers into shallow containers and refrigerate promptly within 1 hour at or below 4°C. Use within 24 hours.
Reheating
Reheat only the portion needed, at most once, to 74°C throughout, including solid centres. Stir and check several places with a food thermometer. Discard reheated leftovers; reheating cannot repair improper storage.
