Iraqi Zalabia
Fresh fried flour-and-starch lace dipped in prepared syrup.

Preparation: 15 min · Cooking: 10 min · Total: 1 hr 15 min · 2 servings
Ingredients
- 120 ml All-purpose flour
- 0.5 tsp Instant dry yeast
- 120 ml Cornstarch
- 120 ml Warm batter water
- 360 ml Prepared ready-to-eat plain sugar syrup for dipping
- 480 ml Initial vegetable oil for deep-frying, process medium
- Extra frying oil only if safe vessel depth requires it (optional)
Instructions
Measure the batter ingredients
Mix the flour, cornstarch and instant yeast. For the base two servings, use 120 ml each of flour and starch with 0.5 tsp yeast.
Mix a smooth batter
Gradually whisk in the measured warm water. Mix from about 3 minutes until smooth; do not taste raw flour/starch batter.
Mix a smooth batter: 180 seconds
Proof and inspect bubbles
Cover and proof from about 45 minutes at a suitable temperature, guided by bubbles and texture. Use promptly rather than parking warm batter indefinitely; no extra ten minutes is prescribed for large batches. Fermentation does not sterilize flour.
Proof and inspect bubbles: 2700 seconds
Prepare a suitable piping tool
Transfer batter to a clean purpose-suitable food-contact piping bottle or tool. Keep the nozzle clear of oil and plastic away from hot pan surfaces.
Heat the measured oil
Heat oil toward 175°C in a suitable deep vessel with headroom and a thermometer. Base oil is 480 ml, half 240 ml and fourfold 1920 ml. Add separately listed extra oil only if safe vessel depth requires it; oil is process medium, not all consumed food.
Pipe and fry the first side
Pipe interlocking thin spirals into oil in manageable uncrowded batches. Begin checking around 2 minutes until the first side is set; keep water, ice and wet tools away from hot oil.
Pipe and fry the first side: 120 seconds
Turn and check fully cooked lace
Turn carefully with suitable tongs and check from about 1 further minute. Continue until the lace is fully cooked without raw dough or starch centres; colour and crispness alone do not prove this.
Turn and check fully cooked lace: 60 seconds
Drain away from the syrup
After each 175°C frying batch, lift with suitable tongs and drain excess oil safely before moving to a stable syrup bowl away from the fryer. Do not dump hot oil into syrup or splash syrup into frying oil.
Dip briefly and serve
Dip fully cooked lace into the prepared syrup from about 30 seconds to taste, then drain and allow safe handling before serving. The 360 ml base syrup is a dipping allowance, not guaranteed consumption; dipping does not finish cooking raw batter.
Dip briefly and serve: 30 seconds
Store safely
Cool promptly in shallow portions and refrigerate, aiming within 1 hour, at 4°C or colder. Use within 24 hours. This is a selected conservative household limit, not a validated shelf life. Follow any shorter product use-by limit; keep cream separate until serving where possible.
Tips
- Cup = 240 ml, tbsp = 15 ml and tsp = 5 ml. Ingredient amounts scale exactly; instruction amounts describe the base 2 servings. Use compatible equipment and manageable batches; times are first checks, not readiness guarantees.
Common mistakes
- Do not restore ingredients from an older draft or count process water, frying media, prepared syrup and conditional additions as a fixed consumed yield. Keep raw foods separate from ready-to-eat food.
Substitutions
- Only explicitly listed alternatives are included. Follow prepared-product labels; do not substitute unknown-acidity vinegar, unpasteurized dairy or a different raw/frozen pocket process.

Reheating
Reheat only the portion needed, at most once, to 74°C throughout. Rice leftovers must have been cooled promptly and used within 24 hours; do not repeatedly rewarm cream-topped pastry.
