Instructions
Prepare suitable glass containers
Use food-safe glass containers cleaned and sterilized following suitable jar instructions. Allow safe cooling and avoid thermal shock during filling. Choose enough capacity for vegetables and liquid; no 300 ml half-batch jar or final yield is guaranteed.
Wash the vegetables
Wash turnip, cucumber and beet under running water with clean tools. Do not use soap or detergent on produce; remove damaged parts.
Slice evenly
Peel the beet and slice all vegetables into similar pieces around 1 cm thick. Size is a preparation guide, not a preservation test.
Arrange without overpacking
Arrange vegetables in suitable clean prepared glass containers with space for brine and the lid. Use more containers if necessary; do not force a fixed jar yield.
Measure the brine
For the base two catalogue servings, combine 240 ml labelled 5% distilled white food vinegar and 240 ml water. Add 1 tbsp coarse sea salt and 1 tsp turmeric. Do not substitute concentrated ättika, cleaning vinegar or unknown-strength vinegar.
Dissolve the salt
Stir from about 2 minutes until salt dissolves and turmeric is distributed. This is not a validated acidification or sterilization step.
Dissolve the salt: 120 seconds
Cover vegetables with fresh brine
Add brine to cover the vegetables. If extra is needed, separately measure fresh brine in the same ratios: 240 ml vinegar plus 240 ml water, 1 tbsp salt and 1 tsp turmeric, or a proportional fraction. Never dilute with plain water or reuse vegetable-contact brine.
Refrigerate immediately, never pantry-store
Close with a suitable food-safe lid and refrigerate immediately at 4°C or colder. Use within 2 days FROM PREPARATION. This selected short household limit does not validate pickling safety or shelf life. No five- or seven-day pantry wait, room-temperature fermentation, canning or shelf-stable storage is included.
Serve cold as a short-use condiment
Use clean utensils and keep the remaining vegetables refrigerated. Pink colour, an airtight lid or a sour taste does not prove preservation; full maturation or softening is not guaranteed.
Store safely
Refrigerate immediately at 4°C or colder and use within 2 days FROM PREPARATION. This short household use limit is not a validated pickling shelf life. Never pantry-store, ferment at room temperature or can this unvalidated formula. Keep covered with fresh brine and use clean utensils.
Tips
- Cup = 240 ml, tbsp = 15 ml and tsp = 5 ml. Ingredient amounts scale exactly; instruction amounts describe the base 2 servings. Use compatible equipment and manageable batches; times are first checks, not readiness guarantees.
Common mistakes
- Do not restore ingredients from an older draft or count process water, frying media, prepared syrup and conditional additions as a fixed consumed yield. Keep raw foods separate from ready-to-eat food.
Substitutions
- Only explicitly listed alternatives are included. Follow prepared-product labels; do not substitute unknown-acidity vinegar, unpasteurized dairy or a different raw/frozen pocket process.

Serve cold with clean utensils and keep the remaining condiment refrigerated. Do not reheat to attempt to rescue an improperly stored batch.
