Preparation: 15 min · Cooking: 1 hr 35 min · Total: 1 hr 55 min · 2 servings
Ingredients
- Large eggplant — 1
- Prepared Iraqi flatbreads — 2
- 250 g Raw bone-in lamb, weight includes bone
- 120 ml Cooked chickpeas, drained and measured AFTER cooking
- 2 tbsp Tomato paste
- Small onion, chopped — 1
- 720 ml Initial hot water for broth
- 1 tbsp Ghee
- Salt, to taste
- Additional boiling water, only if needed; measure additions (optional)
Instructions
Prepare eggplant and cooked chickpeas
Wash and cut the eggplant with clean utensils separate from raw lamb. Measure chickpeas cooked and drained, AFTER cooking: 120 ml for the base two servings. Keep waiting perishables chilled.
Brown lamb and onion
Melt the single measured ghee allowance over medium-high heat in a suitable pot. Brown lamb and onion, checking from about 6 minutes. Continue directly into the broth stage.
Brown lamb and onion: 360 seconds
Stir in tomato paste
Stir in the tomato paste over medium heat from about 1 minute until fragrant without burning. No unlisted garlic is included.
Stir in tomato paste: 60 seconds
Add initial broth water
Carefully add the measured initial hot water and bring to a boil. Season with salt and reduce to gentle simmering under the normal lid.
Simmer lamb until tender
Check lamb from about 1 hour and continue until properly tender. Whole lamb guidance is 63°C plus 3 minutes rest, measured away from bone; tenderness may require longer cooking. Use conditional measured boiling-water top-ups if needed.
Simmer lamb until tender: 3600 seconds
Add eggplant and chickpeas
Add eggplant and cooked drained chickpeas. Simmer gently from about 20 minutes until eggplant and all centres are fully heated and cooked. No large-batch-only heavy salting or extra frying oil is included.
Add eggplant and chickpeas: 1200 seconds
Soften bread with derived broth
Tear the two prepared breads with clean hands for the base batch. Ladle derived hot broth gradually until softened to the intended soaked texture; initial water is not a guaranteed final broth yield or mandatory consumption. Serve any surplus broth alongside.
Assemble and serve immediately
Top with fully cooked lamb, eggplant and chickpeas and serve immediately while hot. Store bread and plain stew separately when possible; assembled leftovers use the selected 24-hour refrigerated limit.
Store safely
Cool promptly in shallow portions and refrigerate, aiming within 1 hour, at 4°C or colder. Use within 24 hours. This is a selected conservative household limit, not a validated shelf life.
Tips
- Ingredient quantities scale exactly; instruction amounts describe the base 2 servings. Cup = 240 ml, tbsp = 15 ml and tsp = 5 ml. Times are first checks, not readiness guarantees; use manageable batches and suitable vessels.
Common mistakes
- Keep raw meat and raw flour dough separate from ready-to-eat food. Do not taste raw dough, grain shells or meat. Distinguish initial liquid, discarded process water, derived broth and conditional additions.
Substitutions
- Only alternatives explicitly listed in this ingredient formula are included; do not restore ingredients from an older draft.
Storage
Cool promptly in shallow portions and refrigerate, aiming within 1 hour, at 4°C or colder. Use within 24 hours. This is a selected conservative household limit, not a validated shelf life.
Reheating
Reheat only the portion needed, at most once, to 74°C throughout. Check meat, filling and any soaked bread centres; rice leftovers must have been cooled quickly and used within 24 hours.
