Iraqi Sambusa
Eight thin pastries with chilled cooked meat filling and cooked seams.

Preparation: 30 min · Cooking: 20 min · Total: 1 hr 40 min · 2 servings
Ingredients
- 1 tbsp Flour for sealing paste
- Small onion, finely chopped — 0.5
- Prepared thin pastry strips, suitably sized — 8
- 150 g Raw minced lamb OR beef
- 60 ml Fresh parsley, chopped
- 0.5 tsp Curry powder
- 0.25 tsp Ground black pepper
- 480 ml Initial oil for deep-frying, process medium
- 1 tbsp Separate water for sealing paste
- Salt, to taste
- Extra frying oil only if safe vessel depth requires it (optional)
Instructions
Cook minced filling
Cook meat and onion in a suitable nonstick skillet over medium heat, using released juices and fat only. Begin checks around 7 minutes and verify 74°C in the filling; no extra sauté oil is included.
Cook minced filling: 420 seconds
Season and chill promptly
Stir in curry, pepper, salt and washed chopped parsley. Portion shallowly and refrigerate promptly, aiming within 1 hour at 4°C or colder; never wait for complete counter cooling.
Make thin sealing paste
Mix the listed sealing flour with its separate water into a thin paste. Use only what is needed for edges; the entire allowance is not guaranteed consumption. Follow the prepared pastry handling instructions.
Divide filling and fold
Share all chilled filling evenly across the 8 base pastry strips. Fold each into a triangle, leaving sound seams without overfilling. Choose suitable larger strips if necessary; do not invent extra wrappers or a fixed tablespoon yield.
Seal and keep cold
Seal final edges thinly with the paste. Keep waiting parcels and filling cold. Use freshly assembled unfrozen parcels; separately refrigerate or serve any unavoidable excess cooked filling safely.
Heat frying oil safely
Heat the measured frying oil toward 175°C in a suitable deep vessel with ample headroom and a thermometer. Base oil is 480 ml; fourfold is 1920 ml (8 cups), not 960 ml. Extra oil is conditional on safe vessel depth, not wholly consumed food.
Fry in manageable batches
Deep-fry in uncrowded manageable batches, checking from about 3–4 minutes. Keep water, ice and wet tools away from hot oil. Adjust heat to avoid burning before pastry and seams cook through.
Fry in manageable batches: 180 seconds
Check pastry seams and filling
Remove a sample safely from the oil before measuring its filling centre: verify 74°C. Check all pastry layers and seams for fully cooked dough with no raw flour paste; colour or hot filling alone is insufficient. Drain safely and serve hot.
Store safely
Cool promptly in shallow portions and refrigerate, aiming within 1 hour, at 4°C or colder. Use within 24 hours. This is a selected conservative household limit, not a validated shelf life.
Tips
- Ingredient quantities scale exactly; instruction amounts describe the base 2 servings. Cup = 240 ml, tbsp = 15 ml and tsp = 5 ml. Times are first checks, not readiness guarantees; use manageable batches and suitable vessels.
Common mistakes
- Keep raw meat and raw flour dough separate from ready-to-eat food. Do not taste raw dough, grain shells or meat. Distinguish initial liquid, discarded process water, derived broth and conditional additions.
Substitutions
- Only alternatives explicitly listed in this ingredient formula are included; do not restore ingredients from an older draft.
Storage
Cool promptly in shallow portions and refrigerate, aiming within 1 hour, at 4°C or colder. Use within 24 hours. This is a selected conservative household limit, not a validated shelf life.
Reheating
Reheat only the portion needed, at most once, to 74°C throughout. Check meat, filling and any soaked bread centres; rice leftovers must have been cooled quickly and used within 24 hours.
