Iraqi Rice with Vermicelli
Basmati and toasted vermicelli with optional cardamom.

Preparation: 10 min · Cooking: 25 min · Total: 40 min · 2 servings
Ingredients
- 240 ml Dry basmati rice, rinsed and drained
- 120 ml Dry fine vermicelli
- 0.5 tsp Salt
- 360 ml Hot water OR prepared vegetable stock, same volume
- 1 tbsp Ghee
- 0.25 tsp Ground cardamom (optional)
- Additional boiling water, only if needed; measure additions (optional)
Instructions
Measure rice and noodles
Measure rice and vermicelli dry. Rinse and drain the basmati; the base two servings use 240 ml rice and 120 ml dry noodles.
Melt the ghee
Melt the measured ghee over medium heat in a suitable pot. Keep the hot liquid ready separately.
Toast vermicelli
Toast vermicelli in that ghee, stirring steadily. Begin checks around 3–4 minutes until golden without burning; avoid violent pan swivelling.
Toast vermicelli: 180 seconds
Coat the rice
Add drained rice and stir over medium heat from about 1 minute to coat the grains.
Coat the rice: 60 seconds
Season and add measured liquid
Add the measured salt and optional cardamom only if using it. Carefully pour in 360 ml hot water OR the same volume of prepared vegetable stock; no extra stock concentrate is included.
Check the uncovered boil
Bring to a boil and check the uncovered stage around 2 minutes. Do not force evaporation to an exact level or seek loud sizzling.
Check the uncovered boil: 120 seconds
Cover and check grains
Cover with the normal lid and maintain a gentle simmer. Begin checks around 15 minutes, or earlier if drying or scorching; add separately listed measured boiling water only if needed. Rice and noodles must be fully cooked, not merely dry.
Cover and check grains: 900 seconds
Fluff and serve
Fluff the cooked grains gently with a fork and serve hot. Keep the optional cardamom optional at every batch size.
Store safely
Cool promptly in shallow portions and refrigerate, aiming within 1 hour, at 4°C or colder. Use within 24 hours. This is a selected conservative household limit, not a validated shelf life.
Tips
- Ingredient quantities scale exactly; instruction amounts describe the base 2 servings. Cup = 240 ml, tbsp = 15 ml and tsp = 5 ml. Times are first checks, not readiness guarantees; use manageable batches and suitable vessels.
Common mistakes
- Keep raw meat and raw flour dough separate from ready-to-eat food. Do not taste raw dough, grain shells or meat. Distinguish initial liquid, discarded process water, derived broth and conditional additions.
Substitutions
- Only alternatives explicitly listed in this ingredient formula are included; do not restore ingredients from an older draft.
Storage
Cool promptly in shallow portions and refrigerate, aiming within 1 hour, at 4°C or colder. Use within 24 hours. This is a selected conservative household limit, not a validated shelf life.
Reheating
Reheat only the portion needed, at most once, to 74°C throughout. Check meat, filling and any soaked bread centres; rice leftovers must have been cooled quickly and used within 24 hours.
