Instructions
Measure this recipe and prepare safely
For the base 2 servings of Iraqi Kahi with Eggs, measure the ingredient list before starting. Cup = 240 ml, tbsp = 15 ml and tsp = 5 ml. Keep raw foods separate from ready-to-eat food and refrigerate perishables until needed.
Read the pastry directions
Choose prepared ghee-laminated sheets with clear oven directions. Keep chilled or thaw as the package directs; do not substitute raw loose flour for prepared pastry.
Preheat according to the package
Preheat the oven to the temperature specified for the chosen pastry, using 200°C only if its package specifies 200°C. Use a lined suitable tray at every batch size, not an industrial oven.
Space the pastry sheets
Arrange 2 sheets with expansion space on the lined tray. Do not brush with extra oil, butter or egg wash. All measured 30 ml vegetable oil belongs to the eggs.
Bake through all layers
Bake for the product-directed time until all layers are cooked through without gummy raw pastry. A golden surface alone is insufficient. Package time replaces the old fixed pan-frying time; the catalogue cooking duration is an estimate.
Allocate the oil to eggs
Heat the measured 2 tbsp oil in a skillet over medium-low heat. Half uses 1 tbsp for 1 egg; fourfold 8 tbsp for 8 eggs, divided between manageable batches.
Cook both white and yolk firm
Add the 2 eggs carefully and cook over medium-low heat until both whites and yolks are completely firm, turning or covering as needed. Do not serve runny yolks or rely on a fixed 3 minutes.
Top each cooked pastry
Season the cooked eggs with salt to taste. Place one fully cooked egg on each fully baked pastry sheet using a clean utensil.
Serve measured honey separately
Serve immediately with the total 2 tbsp honey on the side. No extra Geymar or frying fat is included.
Portion and store safely
Refrigerate promptly in shallow portions, aiming within 1 hour, at 4°C or colder. Use within 24 hours. Do not leave a deep pot to cool on the counter. This selected household limit is not a validated shelf life.
Tips
- Ingredient quantities scale exactly; instruction quantities describe the base 2-serving batch. Use equivalent vessels or manageable batches. Times remind you to check, not to ignore doneness.
Common mistakes
- Do not add ingredients from the previous scaffold or treat initial water, discarded process water and optional top-ups as one fixed consumed total.
Substitutions
- Only alternatives explicitly named in the ingredient list are included in this master.
Storage
Refrigerate promptly in shallow portions, aiming within 1 hour, at 4°C or colder. Use within 24 hours. Do not leave a deep pot to cool on the counter. This selected household limit is not a validated shelf life.
Reheating
Reheat appropriate leftovers at most once to 74°C throughout, then serve immediately. Rice must be cooled promptly and kept no longer than 24 hours; reheating does not rescue mishandled food.
