Instructions
Measure this recipe and prepare safely
For the base 2 servings of Iraqi Date Molasses Rice, measure the ingredient list before starting. Cup = 240 ml, tbsp = 15 ml and tsp = 5 ml. Keep raw foods separate from ready-to-eat food and refrigerate perishables until needed.
Rinse and drain the rice
Rinse the 240 ml dry-measured basmati rice in cold water and drain well. Rinsing water is discarded, not part of the measured 300 ml cooking water.
Soften the onion
Melt 1 tbsp ghee over medium heat. Cook the chopped onion from about 5 minutes until soft and golden without scorching.
Soften the onion: 300 seconds
Season the onion
Stir in 0.25 tsp cardamom and salt to taste over low heat until fragrant.
Measure the sweet cooking liquid
Whisk 60 ml date molasses with 300 ml hot water. These are separate inputs, not 360 ml of pure water. Half uses 30 + 150 ml; fourfold uses 240 + 1200 ml.
Bring the liquid to a boil
Pour the molasses mixture over the onion and bring to a boil over medium-high heat.
Distribute the rice
Add the drained rice and distribute it gently in the liquid. Cover with the normal lid and maintain a gentle simmer, not an extinguished flame.
Check the simmering rice
Begin checking around 18 minutes. Check sooner if drying or scorching; opening the lid to protect the food is allowed. Add small measured amounts of conditional boiling water if needed until rice is tender with no hard centre.
Check the simmering rice: 1080 seconds
Finish without scorching
When the rice is tender and excess liquid is absorbed, turn off the heat and fluff gently. Do not force all possible top-up water into the pot.
Portion and store safely
Refrigerate promptly in shallow portions, aiming within 1 hour, at 4°C or colder. Use within 24 hours. Do not leave a deep pot to cool on the counter. This selected household limit is not a validated shelf life.
Tips
- Ingredient quantities scale exactly; instruction quantities describe the base 2-serving batch. Use equivalent vessels or manageable batches. Times remind you to check, not to ignore doneness.
Common mistakes
- Do not add ingredients from the previous scaffold or treat initial water, discarded process water and optional top-ups as one fixed consumed total.
Substitutions
- Only alternatives explicitly named in the ingredient list are included in this master.
Storage
Refrigerate promptly in shallow portions, aiming within 1 hour, at 4°C or colder. Use within 24 hours. Do not leave a deep pot to cool on the counter. This selected household limit is not a validated shelf life.
Reheating
Reheat appropriate leftovers at most once to 74°C throughout, then serve immediately. Rice must be cooled promptly and kept no longer than 24 hours; reheating does not rescue mishandled food.
