Honeycomb Syrup Bread
Soft cheese-filled pull-apart buns finished with warm syrup or honey.

Preparation: 35 min · Cooking: 25 min · Total: 2 hr 15 min · 8 servings
Ingredients
- 300 g all-purpose wheat flour — Ordinary flour, not ready-to-eat; bake fully.
- 150 ml pasteurized milk, lukewarm — Lukewarm, not hot enough to harm yeast.
- 6 g instant yeast
- 25 g dough sugar
- cream cheese triangle portions, divided — 8 — Divide all eight portions across the dough balls; brand size varies, so no gram equivalent is assumed.
- 120 ml ready-made sugar syrup or honey — One alternative, measured by volume, not 120 g; 480 ml across four pans.
- 40 ml vegetable oil for dough
- medium egg, beaten for brushing — 1
- 0.25 tsp salt, to taste
- extra oil for greasing the pan — Thin film as needed, separate from dough oil.
Instructions
Prepare one pan per base batch
Use one suitable round pan for eight servings, or four comparable pans for thirty-two. Lightly grease each with the separate pan oil. Weigh flour and dough sugar, and keep the cheese refrigerated until filling.
Mix milk, yeast and dough sugar
Whisk the lukewarm milk, instant yeast and dough sugar in a bowl. Leave for 5 minutes. Use milk that feels lukewarm, not hot; this is not a food-safety heat treatment.
Knead and let the dough rise
Mix the measured dough oil, salt and flour into the milk mixture. Knead for 8–10 minutes until smooth. Cover with a clean damp cloth and rise about 1 hour in a warm place until doubled; use the dough’s size, not time alone.
Check doubled dough: 3600 seconds
Divide and fill the buns
Press the risen dough down and divide into similar small walnut-sized pieces. Divide all the cream cheese equally among them. Flatten each piece, enclose its cheese portion and pinch the edges shut into a smooth ball.
Arrange, proof and preheat
Arrange the filled balls close together in the greased pan, leaving room to expand. Cover and proof about 20 minutes until puffy. Preheat the oven to 180°C. Brush the tops lightly with the beaten egg wash.
Check puffy buns: 1200 seconds
Bake and check the centre
Bake in the preheated 180°C oven about 20–25 minutes until golden and cooked through, with fully set egg wash. Check the thickest centre joints for no wet dough; a clean skewer is a baking cue, not proof of pathogen destruction. Continue baking if needed, checking each pan separately.

Glaze with the measured syrup or honey
Warm the selected ready-made syrup or honey gently, then pour it evenly over the hot baked buns. The base pan receives 120 ml; divide 480 ml evenly across four pans at fourfold yield. Let it soak in briefly before pulling apart.
Cool promptly and refrigerate
Serve warm or cool briefly for handling. Portion leftovers into shallow containers and refrigerate promptly within 1 hour at or below 4°C; do not wait indefinitely for room temperature. Keep airtight in the refrigerator for up to 3 days.
Tips
- Ingredient amounts follow the selected yield; numeric examples in the method describe the base batch. Use a suitably sized pot or separate comparable pans for larger batches. Timers are readiness-check reminders, not safety guarantees, and do not multiply with portions.
Common mistakes
- Do not treat the stated time as proof of doneness; check the texture and any required thermometer reading.
Substitutions
- Choose either ready-made sugar syrup or honey for the same measured glaze volume; do not add both full allowances.
Storage
Refrigerate promptly within 1 hour at or below 4°C in shallow airtight containers; use within 3 days.
Reheating
Reheat only the portion needed, at most once, to 74°C throughout, including solid centres. Stir and check several places with a food thermometer. Discard reheated leftovers; reheating cannot repair improper storage.
