Preparation: 30 min · Cooking: 2 hr 30 min · Total: 9 hr · 2 servings
Ingredients
- 200 g RAW boneless lamb shoulder, 3 cm pieces
- 30 ml Ghee, total measured allocation
- 200 g DRY dehulled coarsely cracked harees wheat, NOT precooked bulgur
- 800 ml Initial cooking water
- 500 ml Hot-water reserve, maximum (optional)
- 500 ml Wheat-rinsing water, discarded
- 1000 ml Cold soaking water, discarded
- 1 tsp Salt
Instructions
Rinse the specified grain
Check the wheat is dehulled and coarsely cracked, not precooked bulgur. Rinse with the measured rinse water and discard it. Add the separate cold soaking water in a roomy covered bowl.
Soak under refrigeration
Soak covered for 6 hours at 4°C or colder. Drain and discard soaking water; it is not cooking broth. Keep raw lamb chilled and separate from ready-to-eat foods.
Refrigerated wheat soak: 21600 seconds
Start the lamb and wheat pot
Put drained wheat and boneless lamb in a deep heavy pot with the initial cooking water. Bring to a boil and skim carefully. Add salt and use a normal fitted lid partly ajar, never an airtight seal.
Initial boil first check: 600 seconds
Simmer and scrape the bottom
Simmer gently from a 2-hour first check. Stir and scrape the bottom regularly throughout cooking, using only the listed hot reserve gradually if needed. Do not leave dense porridge undisturbed; extend cooking until wheat is fully soft and lamb is fork-tender.
Harees simmer first check: 7200 seconds
Check lamb and grain before mashing
Check the thickest lamb pieces with a clean thermometer: at least 63°C followed by a 3-minute rest. Continue cooking beyond that minimum as needed for fork-tender lamb and fully soft wheat. There are no bones in this boneless adaptation.
Lamb minimum rest: 180 seconds
Hand-mash away from direct heat
Move the pot safely onto stable heatproof support. Shred tender lamb with clean forks, then hand-mash gently with a sturdy long-handled paddle from a 6-minute first check. Protect hands and face from hot splashes; do not use a powered immersion blender.
Manual mashing first check: 360 seconds
Finish with measured ghee
Check that no hard wheat centres remain and the mixture is cohesive. Spoon into shallow plates and drizzle all the measured ghee over the portions. Serve warm at a comfortable temperature; the grain skins need not disappear completely.
Serve and store promptly
Refrigerate promptly in shallow containers at 4°C or colder for at most 2 days, or an earlier ingredient/package deadline. Do not wait for complete counter cooling. Assembly does not reset older component storage times.
Tips
- Base amounts make 2 catalogue shares, separate from piece yields. For 1 share halve every measured food, garnish and process-water allowance; for 8 shares multiply by 4. Do not multiply cooking time, temperature, bread thickness or pot depth: use suitable comparable vessels or successive base-size batches. Cup 240 ml, tbsp 15 ml, tsp 5 ml. Follow actual product cooking and allergen labels. Never taste raw flour, dough or batter; fully cook all centres.
Common mistakes
- Do not rely on a fixed timer or surface colour alone; use the stated doneness checks and measured allocations.
Substitutions
- Use the specified ingredient states and equipment; reconcile a different product before altering its liquid or cooking method.
Storage
Refrigerate promptly in shallow containers at 4°C or colder for at most 2 days, or an earlier ingredient/package deadline. Do not wait for complete counter cooling. Assembly does not reset older component storage times.
Reheating
Reheat leftovers only once to 74°C throughout, stirring where practical. Follow the earlier ingredient deadline; never reheat temperature-abused food to rescue it.
