Instructions

  1. Separate the two cooking waters

For 4 birds measure 200 g dry freekeh, 4 giblet sets, 2 onions and the other ingredients. Initial measured water is 100 ml stuffing + 2500 ml poaching = 2600 ml; fourfold 400 + 10000 = 10400 ml. Ghee is 1 tbsp stuffing + 3 tbsp browning; onions and 2 tsp salt each split equally between stuffing and poaching.

  2. Soak grain and ready the birds

Rinse freekeh and soak for about 1 hour in the refrigerator at 4°C or colder, then discard the soaking water. Keep raw birds and trimmed minced giblets cold; do not rinse them. Set up the poaching pot with 2500 ml water, 1 onion, 4 cardamom pods and 1 tsp salt, ready to boil before stuffing.

Soak grain and ready the birds: 3600 seconds

  3. Cook giblets fully first

Melt 1 tbsp ghee over medium heat. Sauté the remaining chopped onion with the minced giblets, checking from about 4 minutes. Continue until giblet pieces reach at least 74°C; do not hold a partially cooked mixture for later stuffing.

Cook giblets fully first: 240 seconds

  4. Cook freekeh until tender

Add drained freekeh, allspice, cinnamon and the remaining 1 tsp salt. Add the separate 100 ml stuffing water. Simmer from about 8 minutes, using conditional boiling-water top-up as necessary until the grain is tender and the filling at least 74°C. Have birds and boiling poaching water ready; do not cool the stuffing on the counter.

Cook freekeh until tender: 480 seconds

  5. Fill loosely and poach immediately

Using utensils to avoid burns, loosely fill the body cavities with fresh hot stuffing and a modest amount under intact breast skin. Do not force excess filling inside; cook any excess separately to 74°C. Secure the legs and lower birds directly into the ready boiling poaching liquid. Cover with an ordinary lid and reduce to a gentle simmer; do not store raw stuffed birds for later.

  6. Check meat and stuffing before browning

Start checking after about 40–45 minutes and continue as needed. In every bird, verify the thickest breast and innermost thigh, avoiding bone, AND the centre of stuffing each reach at least 74°C before lifting out for browning. Add conditional boiling water only as needed to cover birds. Remove whole cardamom before serving; time and thigh temperature alone are insufficient.

Check meat and stuffing before browning: 2700 seconds

  7. Drain briefly and shallow-brown

Drain cooked birds briefly and pat surface moisture off with clean paper. Melt the remaining 3 tbsp ghee over medium heat and shallow-brown from about 5 minutes, turning carefully. Use equivalent pans or batches; keep fat shallow and avoid leaving birds counter-drying. Serve promptly with stuffing still at least 74°C.

  8. Cool birds and stuffing promptly

Divide leftovers into shallow containers. Refrigerate within 1 hour at 4°C or colder; use within 24 hours. Reheat a portion at most once to 74°C throughout.
