Instructions

  1. Bloom saffron and measure liquids

Bloom crushed saffron in ALL measured rosewater from a 30-minute first check. Measure water portions separately: base 50 ml wet caramel + 100 ml hot deglazing + 150 ml cold slurry = 300 ml process water, plus 45 ml rosewater. This is charged water, not a retained yield after evaporation. Prepare a deep heavy stainless-steel pot, long-handled utensils and heat-compatible shallow metal containers.

Saffron infusion first check: 1800 seconds

  2. Whisk the cold starch slurry

Whisk pure cornstarch into its COLD slurry water until completely smooth. Keep it separate and resuspend just before use because starch settles. No flour, wheat germ or glucose is added. Never taste uncooked starch slurry.

    Never taste uncooked starch slurry.

  3. Make a light wet caramel

Heat white sugar with ONLY its wet-caramel water over medium heat to a light golden caramel. Watch colour, not a guaranteed five-minute result. Keep the separately measured deglazing water hot and the cold slurry ready. Keep children away and do not touch or taste hot sugar.

  4. Deglaze safely and add slurry

Turn heat OFF and move the pot safely to stable heatproof support. With face/hands away from the steam path, add HOT deglazing water in very small portions using a long-handled utensil; stop pouring if bubbling rises violently. Hot water still splatters. Return to low heat only when controlled to dissolve hardened sugar if needed; then OFF direct heat gradually whisk in resuspended cold slurry. Never dump cold starch water into very hot dry caramel.

  5. Cook with continuous stirring

Cook over medium-low heat while scraping and stirring CONTINUOUSLY. Add all measured ghee in small additions as the mixture thickens. First check after 30 minutes for a fully cooked, smooth, glossy starch paste; follow stricter product directions. Use base-size pots/batches, not a fourfold deep hot-sugar load.

  6. Add saffron and cardamom

Stir in ALL saffron-rosewater infusion and ground cardamom, then cook and stir from a further 5-minute first check. Require fully cooked hydrated starch and a cohesive glossy texture, not merely elapsed time or colour. Do not sample directly with fingers or taste burning-hot sugar.

Final halwa cooking first check: 300 seconds

  7. Portion and garnish safely

Transfer manageable portions with suitable heat-resistant tools into heat-compatible shallow METAL containers. Scatter all measured RTE nuts over the surface. Do not pour boiling halwa into cold unverified ceramic or clay. A small freshly cooked portion may cool to a comfortable eating temperature for immediate service. Keep food depth around 2 cm for prompt cooling.

  8. Refrigerate and check the set

Refrigerate promptly within the stated handling limits; do not require a 2-hour room-temperature set. A 2-hour REFRIGERATED set reminder is only a first check, not proof of core cooling. Store at 4°C or colder for at most 2 days or an earlier label deadline. Serve chilled with clean utensils; no room-temperature shelf-life claim.

Storage

Refrigerate promptly in shallow containers at 4°C or colder for at most 2 days, or the earlier ingredient/package deadline. Assembly does not reset an older component clock.

Reheating

Serve chilled; no reheating cycle. Use a clean utensil and return the remainder promptly to the refrigerator.
