Instructions
Braise lamb
Put raw boneless lamb, its whole chopped onion and turmeric into the initial 750 ml braising water. Simmer gently covered with a normal fitted lid, checking from 90–120 minutes until fork-tender. Measure extra hot water only if needed. Do not rinse raw lamb or use cloth seals.
Braise lamb: 5400 seconds
Recover measured broth
Lift fork-tender lamb with clean suitable tools. Measure 240 ml broth FROM the original braise for the dip; this is not another 240 ml water input. If short, complete only that measured allowance with recorded hot water. Reserve any excess broth separately.
Shred safely
Use forks to shred the cooked lamb finely while safely warm, not bare hands in hot broth and not an unsuitable mixer of hot liquid. Work promptly with clean tools; if delayed, chill in shallow portions at 4°C or colder.
Cook rice fully
Rinse 60 ml dry basmati and simmer in the separate initial 500 ml process water, checking from 15 minutes until completely soft and mashable. Measure extra hot water only if needed; this master uses RICE ONLY, no unspecified white lentils.
Cook rice fully: 900 seconds
Drain rice
Drain fully tender rice and discard its cooking water; mash gently with clean tools. Do not leave cooked rice waiting warm through the long lamb braise: prepare near assembly or cool promptly if delayed. This drains the rice measured as 60 ml dry, cooked in its separate initial 500 ml process water.
Soften eggplant
Pan-cook peeled sliced eggplant in only its reserved 2 tbsp oil over controlled medium-low heat, in batches, checking from 10 minutes until soft throughout. Turn to prevent burning rather than adding unlisted oil.
Soften eggplant: 600 seconds
Simmer the mash base
Combine fully soft eggplant, cooked rice and the measured 240 ml recovered lamb broth. Simmer gently from 15 minutes, stirring, then mash safely in the pot with a potato masher, guarding against hot splashes.
Simmer the mash base: 900 seconds
Fold in lamb
Fold all finely shredded cooked lamb into the hot eggplant-rice mash until evenly distributed. A cohesive texture is intended, not a guaranteed identical elastic result for every cut or product.
Add prepared kashk
Mix the measured 120 ml prepared pasteurized spoonable kashk with its separate 30 ml water, then stir into the mash. Follow actual label heating requirements; plain whey or raw homemade kashk is not a substitute. Simmer from 10 minutes and verify assembled food 74°C throughout.
Add prepared kashk: 600 seconds
Cook onion-garlic garnish
Sauté the separately listed half onion and sliced garlic in only their reserved 0.75 tbsp oil over controlled medium-low heat from 5 minutes until cooked and fragrant, not burnt. Keep this separate from the whole onion used in the lamb braise.
Cook onion-garlic garnish: 300 seconds
Warm mint briefly
Warm the dried mint in only its reserved 0.25 tbsp oil over gentle heat from about 10 seconds until fragrant, not black. Move away from heat before it burns; no extra garnish oil is added.
Warm mint briefly: 10 seconds
Garnish and serve
Check the hot mash at 74°C throughout, adjust listed seasoning and top with all separately cooked onion, garlic and mint. Serve promptly, then chill rice/dairy leftovers rapidly for the selected 24-hour refrigerated limit.
Tips
- Base batch: quantities are for 2 catalogue servings (minimum 1, maximum 8). Cup = 240 ml; tbsp = 15 ml; tsp = 5 ml. Scale ingredients, not temperatures or automatically the cooking times. Wash produce with potable water and keep raw meat/tools away from ready-to-eat food.
- Timers mark first checks, not guaranteed doneness. Keep water/fat allocations separate, use appropriate cookware and manageable batches, normal fitted lids and no towel seals or blocked vents. Conditional top-ups are measured, never guaranteed final yields.
- Use prepared pasteurized spoonable Persian kashk and follow its actual dilution/heating/use-by label, including heating before garnishing if required; plain whey or raw homemade kashk is not a substitute.
Common mistakes
- Do not mistake browning or elapsed time for cooked-through food, omit named process inputs, add unlisted garnish fats or leave perishable food waiting warm.
Substitutions
- Use the specified foods, quantities and dry/cooked preparation states. No unmeasured ingredient swap is approved for this master; separate accompaniments do not replace its measured ingredients.
Storage
Chill promptly in shallow portions within 2 hours (1 hour in hot conditions), at 4°C or colder; selected household limit 24 hours, or any shorter label/use-by limit. Cool rice ideally within 1 hour and use within 24 hours. Keep bread/garnishes separate. This is not a validated shelf life; reheating cannot rescue mishandling.
Reheating
Reheat only once to 74°C throughout, steaming hot, checking several places. Reheat only the needed portion and add only a measured amount of water if necessary. Add separate ready-to-eat garnishes with clean tools.
