Tajik Green Tea
Tajik-style green tea with mint and lemon, steeped gently and served warm.

Ingredients
- 4 tsp loose green tea
- 1000 ml drinking water
- 5 g fresh mint leaves
- 4 pc thin lemon slices, seeds removed
- 20 g granulated sugar (optional)
Instructions
Prepare the tea, mint, and lemon
Measure 4 tsp loose green tea and 5 g fresh mint leaves. Rinse and drain the mint. Rinse the lemon, cut four thin slices, and remove the seeds. Set out a heatproof teapot and four heatproof cups.
Heat then cool the water
Bring 1000 ml drinking water to a full boil. Pour it into a wide heatproof jug and let it cool for about 5–10 minutes toward 80°C before it touches the tea; use a kitchen thermometer if available.
Steep the green tea
Put the tea and drained mint in the heatproof teapot. Add the water at about 80°C, cover, and steep for 2 minutes. Taste a cooled spoonful; strain no later than 3 minutes total to avoid bitterness.
The green tea tastes fresh and aromatic, with no harsh bitterness.
Steep the green tea: 120 seconds
Strain and sweeten if desired
Strain the tea into another heatproof vessel and discard the leaves. If using the optional 20 g sugar, stir in 10 g first, taste, then add up to the remaining 10 g as desired.
Add lemon and serve
Pour the tea into four heatproof cups and add one lemon slice to each. Allow about 10 minutes for the tea to cool, then check that it is comfortable to sip before serving.
Cool before serving: 600 seconds
Tips
- Use the thermometer if you have one; water that is still boiling can make this short green-tea infusion bitter.
Common mistakes
- Do not leave the tea leaves in the pot after 3 minutes; they can make the drink bitter.
Substitutions
- Omit the optional sugar for unsweetened tea; keep the same tea, water, mint, and lemon quantities.
Storage
Best served fresh. If saving leftovers, cool promptly, cover, refrigerate at 4°C or below, and use within 24 hours.
Reheating
Warm refrigerated tea once until steaming, without boiling; serve carefully in heatproof cups.
