  1. Prepare the pan and citrus

    Heat the oven to 175°C conventional heat (160°C fan). Butter a 20 x 30 cm baking dish with some of the 200 g melted butter. Keep the filo covered with a barely damp clean towel so it does not dry out. Finely zest the lemon and orange, keeping the fruit for the syrup. Melt the remaining butter and place the eggs, milk, semolina, sugar, vanilla and salt within reach.

  2. Make and cool the syrup

    For the syrup, put 150 g sugar, 250 ml water, wide strips of lemon and orange peel, and 1 tablespoon lemon juice in a saucepan. Bring to a boil, simmer for 5 minutes without stirring, then remove from the heat. Remove the peel and leave the syrup to cool; hot sugar syrup can cause severe burns, so keep children away and do not taste it while hot.

    The syrup is clear and cooled completely before use.

  3. Cook the semolina custard

    Warm the milk with the vanilla on medium heat until steaming, not boiling. Whisk the 4 eggs, remaining 150 g sugar, semolina, citrus zest and salt in a large heatproof bowl. Slowly whisk in about one-third of the hot milk, then return everything to the saucepan. Cook over medium-low heat, stirring continuously across the base, until thick and bubbling slowly. Check that the custard reaches at least 71°C, then stir in 40 g melted butter. Cover the surface directly and let it stand for 10 minutes.

  4. Layer the filo and bake

    Lay 5 filo sheets in the buttered dish, brushing each sheet with melted butter and letting the edges overhang. Spoon in the warm custard and level it. Fold the overhang over the custard, then top with the remaining 5 sheets, brushing each with butter. Tuck in the edges and score only the top layers into 6 portions. Start the preserved 30-minute timer as the dish enters the oven; check then and continue baking 10–15 minutes if needed, until deeply golden and crisp.

  5. Syrup and rest the pastry

    Leave the baked pastry for 5 minutes. Slowly ladle the completely cooled syrup over the hot filo, concentrating on the cut lines; it will hiss and steam. Let it stand uncovered for 30–45 minutes so the syrup is absorbed and the bottom layers soften while the top remains crisp. Do not pour hot syrup onto hot pastry because it can make the filling soggy and can splash.

  6. Check doneness and safety

    Check that the custard was cooked to at least 71°C before baking and that the baked center is set, not liquid, when a knife is inserted near the middle. The filo should be deep golden, not pale or burnt. Use oven gloves for the hot dish and keep the hot sugar syrup away from skin.

  7. Serve and store safely

    Cut along the scored lines and serve warm or at room temperature. Refrigerate leftovers within 2 hours in a covered container for up to 3 days. Reheat a portion in a 160°C oven until hot throughout, ideally 74°C, to crisp the filo; do not microwave if you want it crisp.
