Emirati Gahwa Arabiya
Light-roast Arabic coffee infused with cardamom and saffron.

Preparation: 5 min · Cooking: 15 min · Total: 25 min · 8 servings
Ingredients
- 3 tbsp light-roast ground Arabic coffee
- 1 tbsp ground cardamom
- 1 pinch saffron threads
- 1 tsp rosewater (optional) — Optional aromatic accent.
- 1000 ml fresh cooking water
Instructions
Measure the coffee batch
Measure the selected water, ground coffee and spices. The base 1-litre water batch is labelled eight servings, not eight guaranteed full mugs; simmering and grounds reduce the final yield.
Boil fresh water
Bring the measured fresh water to a rolling boil in a saucepan or coffee pot over medium heat. Use a pot with headroom for foaming.
Add the ground coffee
Add the selected ground Arabic coffee, 3 tbsp at base yield, to the boiling water. Lower the heat immediately and keep the pot uncovered so the foam can be watched.
Simmer without overflowing
Simmer gently uncovered over low heat for about 15 minutes. Watch closely and reduce heat or lift the pot briefly if foam rises; never leave boiling coffee unattended.
Coffee simmer check: 900 seconds
Settle the grounds
Remove the coffee from heat and leave undisturbed for 2–3 minutes so the grounds settle at the bottom. Do not shake the pot.
Check settled grounds: 120 seconds
Prepare the serving flask
Put the measured cardamom and saffron into a clean heat-safe serving flask. Add the optional rosewater only if selected, then keep the flask open for filling.
Strain and stir before closing
Carefully pour the clear hot coffee through a fine sieve into the flask, leaving settled grounds in the pot. Stir gently with a spoon before closing; do not shake a sealed flask of hot liquid. Follow the flask’s filling and hot-drink instructions.
Serve fresh in small cups
Serve hot in small cups, pouring carefully to avoid scalds. The 4-litre batch uses four times every ingredient and is labelled thirty-two servings. Prepare fresh rather than holding coffee lukewarm for long periods.
Tips
- Ingredient amounts follow the selected yield; numeric examples in the method describe the base batch. Use a suitably sized pot or separate comparable pans for larger batches. Timers are readiness-check reminders, not safety guarantees, and do not multiply with portions.
Common mistakes
- Do not treat the stated time as proof of doneness; check the texture and any required thermometer reading.
Substitutions
- Rosewater is optional; omit it without replacing it with a large volume of liquid. Use lightly roasted ground Arabic coffee.
Storage
Best served freshly brewed. If keeping leftovers, refrigerate promptly within 1 hour at or below 4°C and use within 24 hours; do not rely on a lukewarm flask for storage.
Reheating
Reheat only the portion needed, at most once, to 74°C throughout, including solid centres. Stir and check several places with a food thermometer. Discard reheated leftovers; reheating cannot repair improper storage.
