Fried Cauliflower with Tahini
Crisp fried cauliflower florets with lemon-garlic tahini sauce, Egyptian-style.

Ingredients
- 600 g cauliflower florets — Cut to about 3 cm; wash and dry well.
- 80 g wheat flour — Wheat/gluten allergen; for a thin batter.
- 100 g tahini — Sesame allergen; for the sauce.
- 2 pc garlic cloves — Peel and mince.
- 1 pc lemon — Juice for the sauce.
- 180 ml water — 120 ml for batter, 60 ml for sauce.
- 600 ml neutral frying oil — About 600 ml for deep frying; most remains in the pan, do not fill pan above one-third.
- 1 tsp salt — ½ tsp in batter and ½ tsp in sauce.
Instructions
Measure and wash the ingredients
Measure 600 g cauliflower florets, 80 g wheat flour, 100 g tahini, 2 garlic cloves, 1 lemon, 180 ml potable water, about 600 ml neutral frying oil and 1 tsp salt. Wheat flour contains gluten and tahini contains sesame.
Cut and dry the cauliflower
Wash the cauliflower, cut it into even florets about 3 cm across and dry thoroughly to limit hot-oil splatter. Peel and mince the garlic and juice the lemon. Set out two bowls, a deep heavy pan, thermometer, slotted spoon and draining tray.
Whisk the lemon-tahini sauce
In one bowl whisk 100 g tahini with the lemon juice, minced garlic, 60 ml of the water and ½ tsp salt until smooth and spoonable. Keep this uncooked sesame sauce separate from the frying area.
Mix and rest the batter
In the second bowl whisk 80 g wheat flour with the remaining 120 ml water and ½ tsp salt to a thin, smooth batter. Let it rest about 7 minutes while the oil heats; stir once before coating the cauliflower.
Rest batter and heat oil: 420 seconds
Fry cauliflower in three batches
Heat about 600 ml oil in the deep pan to 175°C; keep the pan no more than one-third full. Dip one-third of the dried florets in batter, let excess drip off and lower them carefully into the oil. Fry 4–5 minutes, turning, until golden and tender. Repeat with two more batches, allowing oil to return near 175°C; about 15 minutes frying total. Never leave hot oil unattended.

Drain and keep sauce separate
Lift the fried florets with a slotted spoon onto the draining tray; let excess oil drip off. Keep the hot cauliflower and the lemon-tahini sauce in separate serving dishes so the crust stays crisp.
Check crispness and tenderness
Check a large floret before serving: the coating should be evenly golden and crisp, with no wet flour inside, and the cauliflower center tender. If firm or doughy, return that floret to 175°C oil briefly and check again; the timer is only a cue.

Serve hot with tahini sauce
Divide the hot fried cauliflower into four portions and serve the tahini sauce separately for dipping. Refrigerate leftovers and sauce in separate covered containers at 4°C or colder within 2 hours; use within 2 days. Let used oil cool completely before safe disposal; do not pour it down the drain.
Tips
- Dry the florets well before battering to limit oil splatter and help the coating adhere.
- Fry in three small batches at about 175°C, letting the oil recover between batches; keep tahini sauce separate until dipping.
Common mistakes
- The draft ratio of 100 g cauliflower to 300 g flour would be mostly batter; use 600 g cauliflower and 80 g flour.
- Crowding the pan drops oil temperature and makes the coating greasy; do not fry all florets at once.
Substitutions
- For a gluten-free version, use a separately tested gluten-free batter recipe rather than assuming any flour behaves like wheat flour. Tahini is sesame and must not be served to someone with a sesame allergy.
Storage
Best served fresh. Cover and refrigerate fried cauliflower and tahini sauce separately at 4°C or colder within 2 hours; use within 2 days.
Reheating
Reheat cauliflower on a tray in a 190°C oven until hot throughout and crisp again (74°C if measured). Serve refrigerated tahini sauce separately; do not re-fry or microwave the sauce.
