Guatemalan Fresco de Rosa de Jamaica
A chilled Guatemalan hibiscus drink with lime, sweetened to balance its tartness.

Ingredients
- 20 g food-grade dried hibiscus calyces
- 1000 ml drinking water
- 75 g granulated sugar
- 15 ml fresh lime juice
- 8 pc ice cubes made from drinking water
Instructions
Check the dried hibiscus
Weigh 20 g food-grade dried hibiscus calyces. Pick out any debris and rinse briefly in a fine sieve. Do not use ornamental garden hibiscus. Set out a small saucepan, fine sieve and heatproof jug.
Boil half the water
Measure 1,000 ml safe drinking water. Put 500 ml in the saucepan and bring to a full boil over medium-high heat, about 5 minutes; then turn off the heat. Keep the other 500 ml cold.
Steep off the heat
Add the rinsed hibiscus to the hot water off the heat and cover the pan. Steep for 10 minutes. The liquid should become deep red and smell pleasantly tart; avoid a much longer steep, which can make it overly sharp.

Steep hibiscus off heat: 600 seconds
Strain, sweeten and dilute
Strain the hot infusion through the fine sieve into the heatproof jug; discard the spent calyces. Stir in 75 g granulated sugar until dissolved, then add the reserved 500 ml cold water. Handle the hot jug carefully.
Add lime and chill
Stir in 15 ml fresh lime juice. Cover the jug and refrigerate for about 60 minutes, until the drink is cold throughout. Check the temperature rather than relying only on the timer; do not leave the jug on the counter to cool.
Cold throughout before serving.
Chill fresco: 3600 seconds
Serve over ice
Place two ice cubes made from drinking water in each of four glasses. Stir the cold fresco once, divide it evenly among the glasses and serve. Refrigerate any remainder promptly.
Tips
- Steep the hibiscus off the heat and taste after straining; a long steep can make the drink too tart.
Common mistakes
- Do not use decorative hibiscus flowers; buy dried calyces sold for food or tea.
- Do not leave the sweetened infusion on the counter for the full chilling period; cover and refrigerate it.
Substitutions
- For a less sweet drink, reduce the 75 g sugar to taste after straining; retain the measured water and hibiscus.
Storage
Cover and refrigerate at 4°C or below; use within 24 hours. Discard if left unrefrigerated for more than 2 hours, or 1 hour above 32°C.
Reheating
Do not reheat the finished fresco; stir and serve chilled.
