40 min hands-on + 24 hr chilling · Total: 24 hr 40 min · 2 servings

- 250 g Dried chickpeas, weighed before soaking
- 3 cloves Garlic, peeled
- 1 tsp Ground cumin
- Small raw onion, chopped — 1
- Small fresh green chili, stem removed — 1
- 1 tsp Ground coriander seed
- 0.5 tsp Red chili flakes
- 0.5 tsp Baking powder
- 1500 ml Initial chickpea soaking water, discarded
- 1000 ml Neutral deep-frying oil, initial bath allowance not consumed yield
- Salt, to taste
- Ground black pepper, to taste
Instructions
Soak cold
Rinse the dried chickpeas and cover with the initial 1500 ml soaking water in a food-safe container with room to swell. Refrigerate at 4°C or colder for 24 hours, adding measured cold water only if needed to keep covered. This method is not for canned chickpeas.
Soak cold: 86400 seconds
Drain thoroughly
Discard all soak water and drain the hydrated chickpeas well in a clean colander. Do not taste this raw mixture and do not count discarded water as retained recipe liquid.
Process to crumbs
Pulse drained raw soaked chickpeas with onion, garlic and green chili in a food processor until fine moist crumbs, not smooth purée. Use manageable batches and keep fingers away from blades.
Season mixture
Mix in the measured cumin, ground coriander, chili flakes and baking powder, plus salt and black pepper to taste. No unlisted flour, parsley, pickle or Amba is mixed in. The baking-powder dose is 0.5 tsp for this base batch.
Shape small patties
Form similarly sized small patties about 1.5 cm thick. The base makes roughly 15–20, half 7–10 and fourfold 60–80, not guaranteed counts. Hold waiting mix and patties at 4°C or colder; never sample raw filling.
Heat a safe oil bath
Use rated deep-frying cookware with ample headroom. The 1000 ml base allowance is a bath, not consumed oil; half 500 ml and fourfold 4000 ml require suitable vessels and batches, never 4 litres in a small pan. Record actual safe bath volume if adjusted. Heat oil to about 175°C with a thermometer. Keep water away; never use water on an oil fire. Keep the deep-frying vessel UNCOVERED; never cover hot oil with a fitted lid during frying.
Fry and inspect centres
Fry small batches around 175°C, checking from 3–5 minutes and turning carefully. The centre must be fully cooked, not raw or chalky. Check selected household centre target 74°C in addition to cooked-through texture; this is not a validated universal chickpea or lectin treatment. Exterior colour alone is insufficient. Fry uncovered throughout this stage.
Fry and inspect centres: 180 seconds
Drain and serve
Lift fully cooked patties with suitable tools onto clean absorbent paper and serve promptly. Separate accompaniments are not part of the measured formula. Cool used oil safely before handling or disposal.
Handle leftovers
Chill cooked falafel promptly in shallow portions within 2 hours, or 1 hour in hot conditions, and keep at 4°C or colder for the selected 24-hour household limit. Reheat once to 74°C throughout.
Tips
- Base batch: quantities are for 2 catalogue servings (minimum 1, maximum 8). Cup = 240 ml; tbsp = 15 ml; tsp = 5 ml. Scale ingredients, not temperatures or automatically the cooking times. Wash produce with potable water and keep raw meat/tools away from ready-to-eat food.
- Timers mark first checks, not guaranteed doneness. Keep water/fat allocations separate, use appropriate cookware and manageable batches, normal fitted lids and no towel seals or blocked vents. Conditional top-ups are measured, never guaranteed final yields.
Common mistakes
- Do not mistake browning or elapsed time for cooked-through food, omit named process inputs, add unlisted garnish fats or leave perishable food waiting warm.
Substitutions
- Use the specified foods, quantities and dry/cooked preparation states. No unmeasured ingredient swap is approved for this master; separate accompaniments do not replace its measured ingredients.
Storage
Chill promptly in shallow portions within 2 hours (1 hour in hot conditions), at 4°C or colder; selected household limit 24 hours, or any shorter label/use-by limit. Cool rice ideally within 1 hour and use within 24 hours. Keep bread/garnishes separate. This is not a validated shelf life; reheating cannot rescue mishandling.
Reheating
Reheat only once to 74°C throughout, steaming hot, checking several places. Reheat only the needed portion and add only a measured amount of water if necessary. Add separate ready-to-eat garnishes with clean tools.
