  1. Pit and chop the dates

    Split every date and remove any stone or hard stem. Weigh 120 g soft dates after pitting and chop them into roughly 1 cm pieces. Check the milk label: use only pasteurized camel milk, not raw milk.

  2. Soak dates and saffron cold

    Measure 800 ml cold pasteurized camel milk. Pour 200 ml over the chopped dates, add 0.05 g saffron threads, cover and soak in the refrigerator for 20 minutes. Keep the remaining 600 ml milk refrigerated.

  3. Blend the soaked dates

    Pour the dates and all 200 ml soaking milk into a clean blender. Close the lid and blend until the dates break down into a fine paste. Switch the blender off before scraping the sides; then close the lid and blend again if needed.

  4. Add milk and cardamom

    Add the remaining 600 ml cold pasteurized camel milk and ¼ tsp ground cardamom. Blend for 30 seconds; check that the drink is smooth and pourable with no hard date pieces. If needed, blend again in short bursts.

  5. Serve cold over ice

    Put two ice cubes made from drinking water into each of four clean glasses (eight cubes total). Divide the blended date milk evenly among the glasses and serve immediately. Refrigerate any leftover drink promptly at 4°C or below and use within 24 hours; do not reheat.
