Sweet cardamom-saffron vermicelli topped with a fully cooked flat omelet.

Preparation: 10 min · Cooking: 20 min · Total: 30 min · 4 servings
Ingredients
- 250 g dry wheat vermicelli noodles — Use the package for initial cooking; finish until tender during steaming.
- medium eggs — 2
- 50 g sugar
- 1 pinch saffron threads
- 0.5 tsp ground cardamom for noodles
- 2 tbsp ghee — Total: half for noodles and half for omelets; 1 + 1 tbsp at four servings.
- 2 tbsp warm rosewater for saffron
- boiling water for vermicelli — Enough to submerge freely, according to the package; drain and discard.
- salt for omelet — A small pinch to taste.
- extra cardamom for omelet (optional) — Optional small pinch, separate from the measured noodle seasoning.
Instructions
Measure for the selected servings
Measure the ingredient list for the selected servings. The base yield is 4; the fourfold yield is 16. Embedded ingredient examples describe the base batch, not extra ingredients. Keep milk, cheese and eggs refrigerated until needed. Use clean utensils.
Infuse Saffron
Bloom the designated saffron threads in the warm rosewater and set aside.
Par-Boil Vermicelli
Bring enough plain water to a rolling boil for all the measured vermicelli to move freely. Follow the noodle package for initial cooking; 2–3 minutes is only a guide. Stop when partly cooked with a firm centre, because steaming follows. Drain immediately and discard the boiling water.
Sweeten & Steam
Return the drained noodles to the warm pot. Gently toss with all the measured sugar, all the measured noodle cardamom, the saffron-rosewater infusion and half the total measured ghee. At four servings the ghee split is 1 tablespoon here and 1 tablespoon for the omelets; at sixteen it is 4 + 4 tablespoons. Cover and steam over very low heat for about 10–15 minutes until tender and the sugar dissolves.
Begin checking steamed noodles: 600 seconds
Cook Omelet
Whisk all the selected medium eggs with a small pinch of salt and optional extra cardamom. Heat the reserved half of the measured ghee in a separate pan over medium heat, dividing it between batches. Spread the egg into thin flat omelets. Flip once and cook each until fully set, with no runny centre, and verify 74°C (165°F) as the owner's conservative target. Use several omelets for a larger batch rather than one thick layer.
Check readiness before proceeding
Check every omelet before assembly: the centre is fully set with no runny egg and reaches the owner-specified 74°C (165°F). Check noodle tenderness separately after 10–15 minutes of steaming. Continue either component as needed; no timer guarantees doneness.

Assembly & Safety
Place the tender sweet vermicelli on serving dishes and lay the fully cooked flat omelets over it. Serve warm. Serve promptly. Divide leftovers into small shallow containers and refrigerate within 1 hour at or below 4°C; do not wait for a deep pot to reach room temperature. Cover once cold. Consume within 2 days. Reheat only the portion needed, at most once, until 74°C (165°F) throughout. Discard reheated leftovers. Reheating cannot rescue food that was stored incorrectly.
Tips
- An extra small pinch of cardamom in the omelet is optional.
- Use the selected ingredient quantities. Larger batches may need several pans or pots; cooking reminders do not multiply with servings.
Common mistakes
- Treating a timer as proof of doneness or counting an allocated liquid or fat twice.
Substitutions
- Check product labels for allergens and cross-contact; substitutions may change texture and cooking time.
