Egyptian Kabsa
Lamb and basmati rice with tomato, carrot and measured strained broth.

Preparation: 25 min · Cooking: 2 hr · Total: 2 hr 45 min · 4 servings
Ingredients
- 600 g dry basmati rice — Dry weight before rinsing and the 20-minute soak; soaking water is discarded.
- 1000 g raw bone-in lamb shoulder, in pieces — Measured for the base batch; use the scaled ingredient list for other yields.
- 80 g concentrated tomato paste — Measured for the base batch; use the scaled ingredient list for other yields.
- 100 g carrots, grated — Measured for the base batch; use the scaled ingredient list for other yields.
- onions, chopped — 2 — Measured for the base batch; use the scaled ingredient list for other yields.
- 1 tbsp prepared whole Kabsa spice mix — Food-grade mix containing cardamom, cinnamon and bay. Follow product directions; strain out whole spices before serving.
- 2000 ml initial boiling lamb-cooking water — Measured for the base batch; use the scaled ingredient list for other yields.
- 1200 ml measured strained broth derived from the lamb pot — Derived allowance, not additional purchased stock: measure from the cooked broth; initial 2000 ml water is not added again to rice.
- boiling water only to top up measured broth if short — Top up only to 1200 ml broth per base batch, 4800 ml fourfold; not an unmeasured extra rice-liquid addition.
- 3 tbsp ghee — Base: 2 tbsp lamb/aromatics + 1 tbsp rice finishing; fourfold 8 + 4 tbsp.
- 1.5 tsp salt — Measured for the base batch; use the scaled ingredient list for other yields.
- rice-rinsing and soaking water, discarded — Measured for the base batch; use the scaled ingredient list for other yields.
Instructions
Measure lamb, rice and separate broth allowances
For 4 portions measure 1 kg raw bone-in lamb and 600 g dry basmati. Initial lamb water is 2000 ml, from which 1200 ml strained broth is later measured for rice. These are not two retained rice-liquid additions; fourfold quantities are 8000 ml initial water and 4800 ml measured broth.
Initial water and derived measured broth are distinguished.
Prepare vegetables and the fat split
Rinse and prepare onions and carrots. Keep raw lamb cold without washing it. Divide the 3 tbsp ghee into 2 tbsp for the lamb base and 1 tbsp for finishing the rice. Use the prepared whole Kabsa mix, not invented counts or old raisins.
Vegetables are prepared and all ghee is assigned.
Build the aromatic lamb base
Heat the base 2 tbsp ghee over medium heat. Sauté onions and the whole spice mix until fragrant without burning. Add lamb and sear for about 5 minutes, then stir in 80 g tomato paste and 100 g grated carrots.
Lamb surfaces are seared and aromatics are not burnt.
Simmer until fully tender
Add 2000 ml boiling cooking water and cover with an ordinary lid. Simmer gently, checking from about 90 minutes until lamb is fully tender and reaches the selected recipe target of at least 74°C away from bone. This higher target is not a universal legal minimum for whole-cut lamb.
Lamb is fully tender and at least 74°C away from bone.
Lamb tenderness check: 5400 seconds
Hold cooked lamb hot and measure broth
Keep fully cooked lamb covered and hot at 60°C or above during rice setup. Strain broth, removing whole aromatics, and measure exactly 1200 ml for rice. If short, add conditional boiling water only to that target; reserve excess separately. Add the measured 1.5 tsp salt.
Only the measured broth is allocated to rice; cooked lamb stays hot.
Rinse and briefly soak rice
Rinse the 600 g dry-weighed rice and soak in separate water for about 20 minutes, then drain completely. Keep the fully cooked lamb covered and hot at 60°C or above during this step; do not leave it cooling on the counter.
Rice is drained; soaking water is discarded and lamb stays hot.
Rice soaking check: 1200 seconds
Cook rice with the final ghee allowance
Bring measured broth to a boil, add drained rice and cook uncovered over high heat until liquid falls to the grain surface. Add the final 1 tbsp ghee and place hot cooked lamb over rice. Lower heat, cover with an ordinary non-pressure lid and steam, checking from 20 minutes until rice is tender.
Rice is tender and the final fat allowance is used.
Kabsa rice steaming check: 1200 seconds
Check meat, grains and whole spices
Check rice from the middle for full tenderness and thick lamb pieces for at least 74°C away from bone. Remove any remaining whole spices; do not eat bay leaves. Divide into 4 hot portions or 16 for the fourfold batch.
Rice is tender, lamb is checked and whole spices removed.
Chill rice and lamb promptly
Divide leftovers into shallow containers and refrigerate within 1 hour at 4°C or colder. Use within 24 hours; reheat a portion at most once to 74°C throughout.
Leftovers are promptly chilled in shallow containers.
Tips
- Scale ingredient amounts with the selected yield; cooking times are estimated checks, not multiplied guarantees.
Common mistakes
- Relying only on the timer or surface colour rather than the stated readiness and handling checks.
Substitutions
- Use the specified master ingredients. Prepared dough and spice blends are explicit compound ingredients; no unseen homemade subrecipes are assumed.
Storage
Divide leftovers into shallow containers and refrigerate within 1 hour at 4°C or colder. Use within 24 hours; reheat a portion at most once to 74°C throughout.
Reheating
Reheat only the portion needed, at most once, to 74°C throughout. Reheating does not repair previous unsafe holding.
