Preparation: 25 min · Cooking: 25 min · Total: 50 min · 12 servings
Ingredients
- 400 g raw ground beef — Measured for the base batch; use the scaled ingredient list for other yields.
- 120 g onion, finely minced — Measured for the base batch; use the scaled ingredient list for other yields.
- 80 g green bell pepper, finely minced — Measured for the base batch; use the scaled ingredient list for other yields.
- 400 g ready-to-use raw whole-wheat yeasted dough, fully proofed — Commercially prepared raw dough, not cooked flatbread. Follow suitable product baking directions; check wheat and possible milk/egg allergens.
- 1.5 tbsp prepared Hawawshi spice blend — Food-grade prepared blend containing cumin, coriander and clove; not an invented homemade subrecipe.
- 1 tsp salt — Measured for the base batch; use the scaled ingredient list for other yields.
- 3 tbsp vegetable oil — Base: 1 tbsp tray + 2 tbsp brushing; fourfold 4 + 8 tbsp. No extra pan grease.
- 1 tbsp flour for dusting the work surface — Separate from the 400 g prepared dough; use only enough to release the sheet. Fourfold 4 tbsp.
Instructions
Measure raw filling and dough separately
For 12 individual spiral rolls measure 400 g raw beef, 400 g raw proofed whole-wheat dough, 120 g onion and 80 g pepper. Keep filling ingredients cold. These rolls are a separate identity from cooked pita-pocket Hawawshi.
Raw filling is cold and prepared dough is correctly identified.
Check dough directions and prepare produce
Use commercially prepared raw whole-wheat yeasted dough whose directions suit this baking method, not cooked flatbread. Check possible milk/egg allergens as well as wheat. Rinse and mince onion and pepper; preheat the oven to 200°C and prepare equivalent trays.
Dough directions and allergens are checked; oven is preheated.
Mix the raw beef filling
Mix cold beef with all onion, pepper, 1.5 tbsp prepared Hawawshi blend and 1 tsp salt until uniform. Do not wash or taste raw filling; keep it refrigerated until spreading over the dough.
Filling is evenly mixed and remains cold.
Roll a thin dough rectangle
Dust the clean work surface from the separate 1 tbsp flour allowance, using only enough to release the dough. Roll the 400 g prepared raw dough into a rectangle about 0.5 cm thick. Do not taste raw dough or flour.
Dough sheet is about 0.5 cm thick without excessive dusting.
Spread filling and roll promptly
Spread the cold raw filling evenly over the 0.5 cm dough sheet. Roll into an even log without thick piles of filling and proceed promptly to slicing and baking; do not leave the assembled raw roll warming on the counter.
The log has an even filling layer and is handled promptly.
Slice and use the tray-oil allowance
Slice the base log into 12 equal spirals. Grease the tray with its 1 tbsp oil allowance and arrange rolls flat with space around them. Fourfold makes 48 similar rolls on more equivalent trays, not larger or thicker spirals.
Twelve equal base rolls are spaced on the measured-oil tray.
Brush with the remaining measured oil
Brush roll surfaces with the remaining 2 tbsp oil; the total base allowance is 1 tbsp tray + 2 tbsp brushing = 3 tbsp. Fourfold uses 4 + 8 = 12 tbsp. No extra hidden pan grease is required.
The full measured oil is allocated without extra grease.
Bake according to dough directions and checks
Bake at 200°C, checking from about 20–25 minutes and following suitable dough-product directions. Continue until meat centres reach at least 71°C and inner pastry layers are fully cooked. Larger batches need additional oven rounds, not thicker rolls or multiplied timers.
Meat reaches 71°C and inner dough layers are cooked.
Hawawshi roll baking check: 1500 seconds
Probe meat and inspect inner seams
Probe several thick meat centres for at least 71°C with a clean thermometer. Inspect inner dough seams for fully cooked pastry without raw or gummy flour paste. Brown meat or dry outer edges alone are insufficient; continue baking if needed.
Thermometer and inner-pastry checks both pass.
Serve finished individual rolls
Serve the 12 base rolls hot, or 48 from fourfold ingredients. The catalogue counts individual rolls, not 12 large dinner servings. Use only fully cooked pieces and avoid leaving the whole tray cooling for extended periods.
Cooked rolls are served promptly and counted individually.
Chill meat-pastry leftovers promptly
Divide leftovers into shallow containers and refrigerate within 1 hour at 4°C or colder. Use within 24 hours; reheat a portion at most once to 74°C throughout.
Leftover rolls are promptly refrigerated in shallow containers.
Tips
- Scale ingredient amounts with the selected yield; cooking times are estimated checks, not multiplied guarantees.
Common mistakes
- Relying only on the timer or surface colour rather than the stated readiness and handling checks.
Substitutions
- Use the specified master ingredients. Prepared dough and spice blends are explicit compound ingredients; no unseen homemade subrecipes are assumed.
Storage
Divide leftovers into shallow containers and refrigerate within 1 hour at 4°C or colder. Use within 24 hours; reheat a portion at most once to 74°C throughout.
Reheating
Reheat only the portion needed, at most once, to 74°C throughout. Reheating does not repair previous unsafe holding.
