Instructions

  1. Measure retained and discarded liquids

Measure 400 g dry basmati, 500 g cold chicken breast and the other ingredients for 4 portions. Retained rice liquid is 480 ml prepared broth + 20 ml rosewater infusion = 500 ml; fourfold 1920 + 80 = 2000 ml. Soaking and parboiling waters are separate and discarded.

Retained broth/infusion is separate from discarded waters.

  2. Soak rice and bloom saffron

Rinse dry rice and soak for about 20 minutes, then drain completely. Bloom 1 pinch saffron in all 20 ml food-grade rosewater. Chop onions and have ample separate parboiling water boiling before cooking the chicken; keep raw chicken cold.

Rice is drained and saffron is infused in the single measured allowance.

    Rice-soak check: 1200 seconds

  3. Cook chicken fully before brief holding

Heat 2 tbsp ghee over medium heat and soften onions until golden. Add chicken and all the prepared spice blend. Check from about 6 minutes, continuing until several thick chicken centres reach 74°C. Hold fully cooked chicken briefly covered and hot at 60°C or above while rice is parboiled; do not set partly cooked chicken aside.

Chicken is at least 74°C before any brief hot hold.

    Chicken thermometer check: 360 seconds

  4. Parboil rice and drain immediately

Add soaked drained rice to ample separate boiling water without extra unlisted salt. Boil uncovered, checking from about 5 minutes until partly cooked with firm centres. Drain completely and proceed immediately to layering while the fully cooked chicken stays hot.

Rice is partly cooked, drained and used immediately.

    Parboiled-rice check: 300 seconds

  5. Layer measured broth, infusion and fat

Place hot fully cooked chicken and onions at the pot base, then spread drained parboiled rice over them. Pour over the measured hot broth with the 1 tsp salt and all saffron-rosewater infusion. Drizzle the remaining 1 tbsp ghee; retained liquid totals 500 ml, not 480 ml inclusive.

Layered rice receives only the measured 500 ml retained liquid.

  6. Steam gently and verify

Cover with an ordinary non-pressure lid and cook over low heat, checking from about 20 minutes until rice is tender and chicken centres are at least 74°C. Times do not multiply with ingredient quantities; this is a stovetop master, not an invented oven stage.

Rice is tender and chicken is at least 74°C.

    Biryani steaming check: 1200 seconds

  7. Check several centres and serve

Probe several thick chicken pieces for at least 74°C and check rice from the middle is fully tender. Divide into 4 hot portions or 16 from fourfold ingredients. Do not add old vermicelli, raisins or unlisted bay leaves.

Both chicken temperature and rice tenderness pass.

  8. Cool rice and chicken promptly

Divide leftovers into shallow containers and refrigerate within 1 hour at 4°C or colder. Use within 24 hours; reheat a portion at most once to 74°C throughout.

Leftovers are shallowly portioned and promptly chilled.
