Preparation: 20 min · Cooking: 40 min · Total: 1 hr · 6 servings
Ingredients
- 400 g dry short-grain Egyptian rice — Weigh dry before rinsing; drain rinsing water completely.
- 600 ml pasteurized whole milk — Measured for the base batch; use the scaled ingredient list for other yields.
- 120 g pasteurized thick clotted dairy cream, Ashta — Thick dairy cream, not the cake recipe’s cooked milk-starch filling.
- 2 tbsp melted ghee for the dish — Entire allowance greases the dish; no additional pan fat.
- 1 tsp salt — Measured for the base batch; use the scaled ingredient list for other yields.
- 0.5 tsp sugar — Measured for the base batch; use the scaled ingredient list for other yields.
- rice-rinsing water, discarded — Measured for the base batch; use the scaled ingredient list for other yields.
- hot pasteurized milk only if needed — Conditional small additions only if rice dries before becoming tender; 600 ml remains the measured initial milk.
Instructions
Measure rice dry and keep dairy cold
Weigh 400 g rice before rinsing. Measure 600 ml whole milk, 120 g thick dairy Ashta, 2 tbsp ghee, 1 tsp salt and 0.5 tsp sugar for 6 small portions. Keep dairy refrigerated until needed; the Ashta is not cooked milk-starch cake filling.
Dry rice is weighed and dairy is cold.
Rinse rice and select a safe baking dish
Rinse rice until the water runs clear, then drain completely. Preheat the oven to 220°C. Choose an oven-rated dish whose manufacturer permits hot milk and a preheated oven; do not pour boiling milk into unsuitable cold clay or preheat empty clay without permission.
Rice is drained and the dish is rated for the heat change.
Heat the measured milk
Bring the measured 600 ml pasteurized milk to a boil in a saucepan, stirring to avoid scorching. Dissolve the measured salt and sugar in it. Watch closely because milk can boil over.
Milk is hot and seasonings are dissolved without scorching.
Assemble the rice and cream
Grease the suitable dish with all 2 tbsp ghee. Add drained rice, carefully pour over the hot milk and spread 120 g thick Ashta over the surface. Fourfold uses 4 equivalent dishes for 24 small portions, not a four-times-deeper pot.
Rice is evenly covered with measured milk and cream.
Bake and check from 35–40 minutes
Bake at 220°C, checking from about 35–40 minutes until rice is fully tender and the centre reaches at least 74°C. Time and browned cream alone do not prove readiness. Use additional equivalent dishes for larger batches rather than deeper layers.
Grains are tender and the casserole centre reaches 74°C.
Cream rice baking check: 2400 seconds
Protect the top while finishing the centre
If the top browns too quickly, cover loosely with foil. If rice is drying while still firm, add only a little conditional hot milk and continue baking at 220°C until tender and at least 74°C in the centre. Do not silently change the initial 600 ml milk quantity.
Top is not burnt; firm grains receive only conditional extra milk.
Verify and serve hot
Check grains from the centre are fully tender and probe the dairy casserole centre for at least 74°C. Serve 6 small hot portions from the base dish. A coloured crust or absorbed milk alone is not sufficient.
Centre is at least 74°C and all sampled grains are tender.
Rapidly chill rice leftovers
Divide leftovers into shallow containers and refrigerate within 1 hour at 4°C or colder. Use within 24 hours; reheat a portion at most once to 74°C throughout.
Rice leftovers are promptly chilled in shallow containers.
Tips
- Scale ingredient amounts with the selected yield; cooking times are estimated checks, not multiplied guarantees.
Common mistakes
- Relying only on the timer or surface colour rather than the stated readiness and handling checks.
Substitutions
- Use the specified master ingredients. Prepared dough and spice blends are explicit compound ingredients; no unseen homemade subrecipes are assumed.
Storage
Divide leftovers into shallow containers and refrigerate within 1 hour at 4°C or colder. Use within 24 hours; reheat a portion at most once to 74°C throughout.
Reheating
Reheat only the portion needed, at most once, to 74°C throughout. Reheating does not repair previous unsafe holding.
