Eggplant Pickles with Coriander

Preparation: 20 min · Cooking: 12 min · Total: 4 hr 32 min · 4 servings

Ingredients

Instructions

  1. Measure a fresh refrigerated dish

Measure 400 g prepared small eggplants and the dressing ingredients for 4 small side portions. This is a fresh refrigerated marinated dish, not shelf-stable canned pickles, and the ingredients do not promise a 500 g finished jar.

Ingredients are measured without a preservation claim.

  2. Rinse fresh produce first

Rinse eggplants and fresh coriander under running water before preparing them. Remove stems and chop coriander and garlic. Washing reduces contamination but does not sterilize produce; do not retain the source’s unwashed-eggplant instruction.

Vegetables and herbs are rinsed and prepared.

  3. Boil and discard cooking water

Cover eggplants with separate boiling water and simmer uncovered, checking from 10–12 minutes until softened but still holding shape. Drain completely and discard this water; it is not retained pickling liquid.

Eggplants are tender enough to slit but hold shape.

    Eggplant simmer check: 720 seconds

  4. Mix the measured Dakka

Mix all 60 g garlic, 40 g fresh coriander, ground coriander, cumin, salt, 50 ml 5%-acidity vinegar and 30 ml lemon juice. Do not dilute with the discarded cooking water or extra water merely to cover a container.

Measured dressing is mixed without extra dilution.

  5. Cool briefly, slit and stuff

Let drained eggplants cool promptly just enough to handle safely, then slit lengthwise without cutting apart. Divide the measured garlic dressing among them and place in clean food-safe shallow containers, pouring over any remaining measured dressing.

Stuffed eggplants are shallowly arranged, not tightly packed hot.

  6. Rest for flavour in the refrigerator

Refrigerate within 1 hour at 4°C or colder and let the dish rest for about 4 hours inside the refrigerator before serving. Do not leave a tightly packed warm jar cooling for hours on the counter.

Flavour rest takes place in the refrigerator.

    Refrigerated flavour rest: 14400 seconds

  7. Serve chilled side portions

Serve 4 small side portions from the base batch or 16 from fourfold ingredients. Keep remaining portions refrigerated. Vinegar labelled 5% does not prove the final dish’s acidity or make this a validated canning recipe.

Only portions being served leave refrigeration.

  8. Use within two days of preparation

Keep at 4°C or colder and consume within 2 days of preparation, including the four-hour rest, not 5 days. Do not can, ferment, pressure-seal or store at room temperature as preserved pickles.

The fresh refrigerated dish is used within two days.
