Emirati Egg Regag
Pliable Regag with a thin, fully cooked egg layer, folded into triangles.

Preparation: 10 min · Cooking: 15 min · Total: 25 min · 4 servings
Ingredients
- pliable ready-made Regag sheets — 4 — One foldable sheet per egg; brittle sheets will break.
- medium eggs — 4
- ground black pepper — To taste.
- 4 tbsp melted ghee — One tablespoon per sheet.
- salt — To taste; the measured table overrides the approximate opening ratio.
Instructions
Measure for the selected servings
Measure the ingredient list for the selected servings. The base yield is 4; the fourfold yield is 16. Embedded ingredient examples describe the base batch, not extra ingredients. Keep milk, cheese and eggs refrigerated until needed. Use clean utensils.
Preheat Pan
Heat a large, flat non-stick frying pan or crepe pan over medium-low heat.
Lay Pliable Bread
Place one sheet of pre-made Regag flatbread flat into the dry pan. The bread sheet must be sufficiently pliable to bend and fold later; fully brittle sheets will fracture into pieces.
Crack & Spread Egg
Directly crack 1 medium egg onto the center of the Regag bread. Working immediately with the back of a spoon, break the yolk and smear the raw egg evenly across the surface of the bread in a thin, uniform layer. Season with a tiny pinch of salt and black pepper. (Safety warning: Raw egg mixtures carry bacteria; never taste the uncooked egg layer).
Add Ghee & Set
Drizzle 1 tablespoon of the measured melted ghee over each egg layer. Cook undisturbed over medium-low heat for about 2 minutes, then check. Continue until the white and yolk are completely set with no wet or runny centre. Cover briefly if needed to set the top without scorching the bread. Time alone does not guarantee cooking.
Begin checking egg layer: 120 seconds
Check readiness before proceeding
Check every sheet before folding: the egg white and yolk are fully set with no wet or runny centre. Continue over medium-low heat if needed, covering briefly if the bottom browns before the top sets. Do not assume 2 minutes guarantees doneness; never taste raw egg.

Fold & Serve
Use a wide spatula to fold the pliable Regag bread in half, then fold it again into a crisp triangle. Press down for 10 seconds to seal, remove from heat, and serve immediately.

Serve and store safely
Serve promptly. Divide leftovers into small shallow containers and refrigerate within 1 hour at or below 4°C; do not wait for a deep pot to reach room temperature. Cover once cold. Consume within 2 days.
Tips
- Adjust the salt and pepper to taste; cook each egg layer completely.
- Use the selected ingredient quantities. Larger batches may need several pans or pots; cooking reminders do not multiply with servings.
Common mistakes
- Treating a timer as proof of doneness or counting an allocated liquid or fat twice.
Substitutions
- Check product labels for allergens and cross-contact; substitutions may change texture and cooking time.
Storage
Serve promptly. Divide leftovers into small shallow containers and refrigerate within 1 hour at or below 4°C; do not wait for a deep pot to reach room temperature. Cover once cold. Consume within 2 days.
Reheating
Reheat only the portion needed, at most once, until 74°C (165°F) throughout. Discard reheated leftovers. Reheating cannot rescue food that was stored incorrectly.
