Instructions

  1. Measure for the selected servings

Measure the ingredient list for the selected servings. The base yield is 4; the fourfold yield is 16. Embedded ingredient examples describe the base batch, not extra ingredients. Keep milk, cheese and eggs refrigerated until needed. Use clean utensils.

  2. Desalt Cured Fish

Weigh the salt-cured fish before desalting: 400 g for four servings, 1.6 kg for sixteen. Follow its supplier's desalting and storage directions; 15 minutes is the supplied simmer check, not a universal desalting guarantee. Cover in a pot with separate plain water. Bring to a boil and simmer about 15 minutes or as directed. Avoid splashing. Drain and discard this water completely. Remove skin and bones carefully.

    Check fish desalting: 900 seconds

  3. Sauté Base

Heat the measured ghee in a clean pot over medium heat. Sauté all the chopped onions until soft and golden. Stir in all the measured Bezar and turmeric for 30 seconds until fragrant.

  4. Sear Fish

Add the boiled, desalted fish pieces into the spiced onions. Stir very gently for 2 minutes so the fish absorbs the aromatics without breaking into tiny fragments.

Gently coat fish in aromatics: 120 seconds

  5. Cook Rice

Add all the measured fresh rice water and bring to a rolling boil. Add all the rice, weighed dry then rinsed, soaked according to its package and thoroughly drained. The four-serving base uses 600 g rice and 1000 ml fresh water. Do not add extra salt initially. Cook on high heat until liquid falls below the rice surface. Cover tightly, reduce to the lowest heat and steam about 20 minutes; check tenderness and adjust with a little boiling water if needed.

    Check steamed rice: 1200 seconds

  6. Check readiness before proceeding

Before serving, check every pot: the thickest fish pieces reach at least 63°C (145°F), are opaque and flake easily, and the rice has no hard centre. Continue cooking as needed; add a little boiling water only if the rice needs it. Desalting and a timer do not prove safety or repair spoiled fish.

  7. Plate the fully cooked fish and rice

Once the fish and rice meet the preceding checks, spoon gently onto a warm platter without crushing the fish. Inspect for any remaining bones and serve immediately. Keep large-batch pots hot until serving, rather than leaving sixteen portions lukewarm.

  8. Rice Leftover Safety

Serve promptly. Divide leftovers into small shallow containers and refrigerate within 1 hour at or below 4°C; do not wait for a deep pot to reach room temperature. Cover once cold. Consume within 24 hours. Reheat only the portion needed, at most once, until 74°C (165°F) throughout. Discard reheated leftovers. Reheating cannot rescue food that was stored incorrectly.
