Preparation: 15 min · Cooking: 0 min · Total: 15 min · 4 servings
Ingredients
- 200 g pasteurized Domiati cheese — Commercially packaged, cold and within use-by/opening directions. Pasteurization does not guarantee freedom from later contamination.
- 100 g ripe tomatoes, diced — Measured for the base batch; use the scaled ingredient list for other yields.
- 1 tsp fresh mint, chopped — Measured for the base batch; use the scaled ingredient list for other yields.
- flatbread for serving (optional) — Optional separate accompaniment, not a required 500 g bread allowance.
- 60 g fresh cucumber, diced — Measured for the base batch; use the scaled ingredient list for other yields.
- 20 ml extra-virgin olive oil — Measured for the base batch; use the scaled ingredient list for other yields.
Instructions
Check the cold cheese
Use 200 g commercially packaged pasteurized Domiati cheese, refrigerated and within its label use-by and after-opening directions. Keep cold until assembly. This is not a guarantee of zero contamination or blanket suitability for vulnerable diners.
Cheese is cold and its label has been checked.
Rinse and cut fresh produce
Rinse tomatoes, cucumber and mint under running water before cutting. Weigh 100 g diced tomato and 60 g diced cucumber; measure 1 tsp chopped mint for the base plate.
Produce is rinsed and measured.
Crumble the cheese
Crumble the cold cheese in a clean serving bowl with a fork until evenly broken up. This dish has no cooking stage; do not add an inherited heating timer.
Cold cheese is evenly crumbled.
Add vegetables and mint
Add the diced tomatoes, cucumber and chopped mint to the cold cheese. Keep the assembly brief so the ingredients remain chilled.
Vegetables are distributed through the cold cheese.
Dress gently with measured oil
Drizzle the measured 20 ml olive oil evenly over the plate and mix gently. No old olives or additional salt are required by this master.
The oil lightly coats the cheese and vegetables.
Serve small appetizer portions
Divide the base plate into 4 small appetizer portions. Fourfold ingredients give 16 small portions across 4 equivalent plates, not 4 unspecified large platters. Optional flatbread is a separate accompaniment.
Small portions are served promptly while cold.
Keep serving time short
Serve immediately and keep unused portions cold. Do not leave the entire cheese plate warming on the counter; assemble only the amount needed when practical.
Unused cheese portions remain cold.
Refrigerate within the selected limit
Cover unused portions and refrigerate within 1 hour at 4°C or colder. Use within 2 days or sooner if the cheese label requires; the recipe does not extend the product’s after-opening limit.
Leftovers are promptly chilled within the cheese label’s limit.
Tips
- Scale ingredient amounts with the selected yield; cooking times are estimated checks, not multiplied guarantees.
Common mistakes
- Relying only on the timer or surface colour rather than the stated readiness and handling checks.
Substitutions
- Use the specified master ingredients. Prepared dough and spice blends are explicit compound ingredients; no unseen homemade subrecipes are assumed.
Storage
Cover and refrigerate within 1 hour at 4°C or colder; use within 2 days or earlier if the cheese label requires.
Reheating
Serve cold; do not heat and cool the whole plate repeatedly.
