Persian Stuffed Peppers

Preparation: 25 min · Cooking: 1 hr 15 min · Total: 1 hr 40 min · 2 servings

Ingredients

Instructions

  1. Cook the split peas

Rinse the measured dry yellow split peas. Simmer separately in the initial 500 ml process water, starting checks at 25 minutes and continuing until fully tender before any acidic sauce. Follow compatible package instructions; measure extra hot water only if needed. Do not taste raw peas.

Cook the split peas: 1500 seconds

  2. Drain tender peas

Drain after the 25-minute first check or longer, only when peas are fully tender, and discard their cooking water. Do not add firm peas to the acidic tomato sauce.

  3. Parboil rice

Rinse the measured dry basmati. Bring the initial 500 ml parboiling water to a boil, salt to taste and add rice. Check from 7 minutes: grains should soften outside but retain a firm centre, not become fully cooked. Measure any needed extra boiling water separately.

    Parboil rice: 420 seconds

  4. Drain safely

Drain the partly cooked rice through a suitable colander, discarding its process water. Use dry grips and manageable batches, away from children. Continue promptly to the hot assembly stage; do not leave parboiled rice waiting warm.

  5. Prepare peppers

Wash the 3 peppers, remove seeds and save their caps. Keep whole peppers upright; for the half recipe, use 1 whole and 1 stable cut-side-up half pepper rather than trying to stand a cut shell on its side.

  6. Cook filling base

Sauté onion in measured oil over medium heat from 5 minutes until soft. Add beef, break it up and cook all mince to selected 74°C, then stir in measured turmeric, cinnamon and seasoning. Brown colour alone is not sufficient.

    Cook filling base: 300 seconds

  7. Fill without compression

Fold drained rice and fully tender split peas into cooked beef. Spoon loosely into peppers with room for rice expansion and replace caps. Divide by actual capacity, not a fixed 70 g per pepper; cook any excess separately until rice is tender and mixture 74°C. Work promptly or chill if delayed.

  8. Mix sauce

Whisk all 240 ml retained sauce water with the measured tomato paste, lemon juice and salt to taste. No extra fresh tomatoes, herbs or saffron are part of this master.

  9. Simmer gently

Arrange peppers securely in suitable cookware, pour sauce around them and use a normal fitted lid. Simmer on medium-low heat from 40 minutes until peppers and rice are tender and each filling centre reaches 74°C. Measure extra hot water only if needed; use manageable batches at larger scales.

    Simmer gently: 2400 seconds

  10. Serve cooked peppers

Lift with suitable tools, keeping the hot sauce away from hands, and serve promptly. Three peppers are shared across 2 catalogue servings; chill leftovers rapidly rather than leaving cooked filling warm.

Storage

Chill promptly in shallow portions within 2 hours (1 hour in hot conditions), at 4°C or colder; selected household limit 24 hours, or any shorter label/use-by limit. Cool rice ideally within 1 hour and use within 24 hours. Keep bread/garnishes separate. This is not a validated shelf life; reheating cannot rescue mishandling.

Reheating

Reheat only once to 74°C throughout, steaming hot, checking several places. Reheat only the needed portion and add only a measured amount of water if necessary. Add separate ready-to-eat garnishes with clean tools.
