Emirati Date-Stuffed Regag
Foldable Regag filled with cardamom date paste and crisped in a pan.

Preparation: 10 min · Cooking: 10 min · Total: 20 min · 4 servings
Ingredients
- pliable ready-made Regag sheets — 4 — One piece is one foldable sheet, not a brittle crisp.
- 240 g soft date paste
- 1 tsp ground cardamom
- 2 tbsp melted ghee for filling — Latest confirmed method: all of this measured ghee goes into the filling.
- 2 tbsp warm water for filling
- 4 tsp melted ghee for optional drizzle (optional) — Optional 1 tsp per sheet; not another mandatory fat allowance.
- ghee for the pan if needed (optional) — Only a light film if the non-stick pan needs it.
Instructions
Measure for the selected servings
Measure the ingredient list for the selected servings. The base yield is 4; the fourfold yield is 16. Embedded ingredient examples describe the base batch, not extra ingredients. Keep milk, cheese and eggs refrigerated until needed. Use clean utensils.
Prepare Date Filling
Mash all the measured date paste with all the measured filling water, filling ghee and cardamom until smooth and spreadable. Divide the completed filling into as many equal portions as there are selected bread sheets: four at the base yield, sixteen at fourfold yield. Portion the mixed filling, not 60 g of it; the water and ghee add weight.
Warm the Griddle
Heat a wide, flat non-stick frying pan or crepe griddle over medium-low heat. Use only a light film of optional pan ghee if needed; the two base tablespoons belong to the filling.
Position Pliable Bread
Place one whole pre-made sheet of Regag flatbread flat onto the pan. The bread must be sufficiently pliable to fold; if using fully brittle, bone-dry crispy sheets, they will snap and break when folded.
Apply Filling
Work quickly: spread one equal portion of the prepared filling across half of each pliable sheet. Optionally drizzle 1 teaspoon of extra melted ghee over that portion. Repeat with the remaining sheets; do not add the filling-ghee allowance again.
Fold & Crisp
Fold the empty half of the Regag bread over the date-filled side to form a half-moon shape. Press down gently with a spatula. Cook for 1 minute until crisp, then flip and cook the other side for 30 seconds. Allow to cool to a safe handling temperature, and serve warm. Store leftovers in a container in the refrigerator at 4°C or below for up to 2 days.
First side of filled Regag: 60 seconds
Second side after flipping: 30 seconds
Check readiness before proceeding
Check each filled sheet after about 1 minute on the first side and 30 seconds on the second: both sides are crisp without scorching and the filling is warm. Work in batches and allow the hot filling to cool to a safe eating temperature.

Serve and store safely
Serve promptly. Divide leftovers into small shallow containers and refrigerate within 1 hour at or below 4°C; do not wait for a deep pot to reach room temperature. Cover once cold. Consume within 2 days.
Tips
- The extra ghee drizzle is optional; omit it for a lighter finish.
- Use the selected ingredient quantities. Larger batches may need several pans or pots; cooking reminders do not multiply with servings.
Common mistakes
- Treating a timer as proof of doneness or counting an allocated liquid or fat twice.
Substitutions
- Check product labels for allergens and cross-contact; substitutions may change texture and cooking time.
Storage
Serve promptly. Divide leftovers into small shallow containers and refrigerate within 1 hour at or below 4°C; do not wait for a deep pot to reach room temperature. Cover once cold. Consume within 2 days.
Reheating
Reheat only the portion needed, at most once, until 74°C (165°F) throughout. Discard reheated leftovers. Reheating cannot rescue food that was stored incorrectly.
