Emirati Date Mahalabiya
Date-and-milk pudding with cardamom and rosewater, served chilled.

25 min hands-on + 2 hr chilling · Total: 2 hr 25 min · 4 servings
Ingredients
- 500 ml pasteurized whole milk — Use four fifths for blending and one fifth cold for the starch slurry: 400 + 100 ml at four servings.
- 125 g smooth date paste
- 50 g cornstarch — Owner-confirmed firm pudding master: 50 g per 500 ml milk; no spoon equivalent.
- 0.5 tsp ground cardamom
- 1 tbsp rosewater
Instructions
Measure for the selected servings
Measure the ingredient list for the selected servings. The base yield is 4; the fourfold yield is 16. Embedded ingredient examples describe the base batch, not extra ingredients. Keep milk, cheese and eggs refrigerated until needed. Use clean utensils.
Blend Base
Blend the measured date paste with four fifths of the milk until smooth. Reserve the remaining one fifth cold for the starch slurry. For the four-serving base this is 125 g dates with 400 ml milk, reserving 100 ml; multiply all amounts together for the selected servings. Pour into a cold saucepan.
Dissolve Cornstarch
Whisk all the measured cornstarch into the reserved cold fifth of the milk until lump-free. Pour into the saucepan with the blended date milk. At four servings this is 50 g starch in 100 ml milk, not additional milk.
Thicken on Heat
Add the ground cardamom. Place the saucepan over medium-low heat. Stir continuously with a hand whisk without stopping. As the mixture heats, the starch activates, thickening it into a smooth custard texture (about 8–10 minutes).
Begin checking pudding thickness: 480 seconds
Aromatics & Setting
Once the pudding bubbles and thickens, remove from heat and stir in the measured rosewater. Divide among small shallow serving bowls. Cool promptly and refrigerate within 1 hour at or below 4°C; do not wait indefinitely for room temperature. The separate refrigerated setting phase follows.
Chill to set
Once promptly refrigerated at or below 4°C, leave the small pudding bowls to set for at least 2 hours. This setting timer starts in the refrigerator, not on the counter; larger batches need more bowls, not a deep warm pot.
Minimum refrigerated setting time: 7200 seconds
Check readiness before proceeding
After at least 2 hours in the refrigerator, check that each bowl is chilled and set. Serve cold with a clean spoon. The confirmed starch amount makes a firm pudding; do not judge readiness by the timer alone.

Serve and store safely
Serve promptly. Divide leftovers into small shallow containers and refrigerate within 1 hour at or below 4°C; do not wait for a deep pot to reach room temperature. Cover once cold. Consume within 3 days.
Tips
- Serve in small chilled bowls; keep the confirmed starch-to-milk ratio.
- Use the selected ingredient quantities. Larger batches may need several pans or pots; cooking reminders do not multiply with servings.
Common mistakes
- Treating a timer as proof of doneness or counting an allocated liquid or fat twice.
Substitutions
- Check product labels for allergens and cross-contact; substitutions may change texture and cooking time.
Storage

Reheating
Serve chilled or cold from proper refrigerated storage; reheating is not required. Discard improperly stored food.
