Instructions
Measure for the selected servings
Measure the ingredient list for the selected servings. The base yield is 4; the fourfold yield is 16. Embedded ingredient examples describe the base batch, not extra ingredients. Keep milk, cheese and eggs refrigerated until needed. Use clean utensils.
Refrigerated Soak
Rinse the dried chickpeas. Place them in a large bowl, cover completely with cold water, and leave in the refrigerator to soak safely for 12 hours (overnight). Discard all soaking water completely before cooking.
Refrigerated soak check: 43200 seconds
Initial Boil
Place the soaked chickpeas into a deep pot with the designated fresh cooking water. Bring to a rolling boil over high heat, and use a spoon to continuously scoop off and discard any white foam that rises to the top.
Simmer
Turn the heat down to low, cover the pot with a standard lid, and let it simmer for 1.5 hours. Ensure the chickpeas remain submerged; top up with minimal boiling water if dry.

Season & Verify
Stir in the weighed salt, cumin, and chili powder. Cover and cook for 15 more minutes until the chickpeas are completely tender and can be easily mashed between two fingers.
Check seasoned chickpeas: 900 seconds
Check readiness before proceeding
Lift out a chickpea with a clean spoon and let it cool enough to handle. It must mash easily with no hard centre. Continue simmering if needed; larger or older chickpeas may take longer than 1.5 hours plus 15 minutes.

Serve and store safely

Tips
- The cumin and chili are optional and may be adjusted to taste.
- Use the selected ingredient quantities. Larger batches may need several pans or pots; cooking reminders do not multiply with servings.
Common mistakes
- Treating a timer as proof of doneness or counting an allocated liquid or fat twice.
Substitutions
- Check product labels for allergens and cross-contact; substitutions may change texture and cooking time.
Storage
Serve promptly. Divide leftovers into small shallow containers and refrigerate within 1 hour at or below 4°C; do not wait for a deep pot to reach room temperature. Cover once cold. Consume within 3 days.
Reheating
Reheat only the portion needed, at most once, until 74°C (165°F) throughout. Discard reheated leftovers. Reheating cannot rescue food that was stored incorrectly.
