Instructions

  1. Sort dry chickpeas

Sort the DRY chickpeas and discard stones or damaged material. Put in a roomy bowl with the measured cold soaking water and cover. This is dry weight before hydration, not canned or cooked chickpeas.

  2. Soak in the refrigerator

Soak in the refrigerator at 4°C or colder for 12 hours. Use a bowl with expansion room. The chickpeas should swell; do not leave the overnight soak at room temperature.

    Refrigerated chickpea soak: 43200 seconds

  3. Drain and add fresh cooking water

Drain and discard all soaking water. Rinse with the separately measured rinsing water, discard it and transfer chickpeas into a suitable compact deep pot. Add the fresh initial cooking water; rinsing/soaking water is not reused as broth. For the base, rinsing uses 500 ml discarded water and fresh cooking starts with 1000 ml.

  4. Season and bring to a boil

Add the whole dried chili and measured salt, bring to a full boil, then lower to a gentle simmer with a normal fitted lid. Maintain coverage using only the bounded hot-water reserve if needed. Do not impose a 5 cm depth rule on every pot.

    Bring-to-boil first check: 300 seconds

  5. Simmer and monitor the liquid

Simmer with a first tenderness check after 75 minutes. Check liquid periodically and top up gradually from the listed reserve before the pot scorches; never add an unlimited splash. Continue until the chickpea centres are completely tender, following stricter product directions.

  6. Check a cooled sample

Lift a test chickpea with a clean spoon and let it cool before pressing with clean fingers or a fork. It should mash easily without a hard centre. Do not put fingers into boiling liquid. If the reserve cap is insufficient, reconcile cookware/product instead of declaring the batch ready. Continue cooking until a cooled sample mashes easily.

  7. Drain and serve warm

Drain carefully through a stable colander, keeping steam away from face and hands. Remove the chili if preferred and serve warm with only the measured optional lemon wedges. No dried lime, cumin or coriander is added. The base optional lemon garnish is one-quarter of 1 small lemon.

  8. Cool and store safely

Refrigerate shallow leftover portions promptly within 2 hours, or 1 hour above 32°C; keep at 4°C or colder for at most 2 days. These are refrigerator-entry limits, not guaranteed core cooling. If reheating, do it once to 74°C throughout.
