  1. Cook the eggs and warm the salsa

    In a covered nonstick skillet over medium-low heat, cook the four eggs until both whites and yolks are firm, about 4–6 minutes; transfer them to a clean plate. Pour the 500 ml salsa into the same skillet and bring it to a gentle simmer for 2–3 minutes.

    Both the egg whites and yolks are firm, and the salsa is gently simmering.

  2. Coat chips

    Turn off the heat. Fold the 250 g tortilla chips through the hot salsa for 30–60 seconds, just until coated and lightly softened; divide among four plates immediately.

    The chips are coated and still retain a little texture.

  3. Top and serve

    Top each plate with one fully cooked egg, a quarter of the 100 g crumbled queso fresco, and some of the chopped cilantro. Serve promptly while the salsa and eggs are hot.

    Each serving has one fully cooked egg, cheese, and cilantro over lightly softened chips.

Storage

Best eaten immediately. Refrigerate any assembled leftovers within 2 hours at 4°C or colder and eat within 2 days; the chips will soften. Use pasteurized cheese and check labels for milk and egg allergens.

Reheating

Reheat leftovers thoroughly to 74°C/165°F; the chips will be soft. Do not reheat a portion more than once.
