Instructions

  1. Build the chicken base

Heat 2 tbsp of the total 4 tbsp ghee over medium heat. Sauté onion and garlic until golden. Add tomatoes, Bzar, salt and pierced loomi. Add the cold raw chicken without washing and sauté about 3 minutes; proceed straight to simmering, not a holding stage.

  2. Simmer and verify chicken

Pour in 2000 ml boiling water and return to a boil. Cover with an ordinary non-airtight lid and simmer gently on low heat about 45 minutes. Probe several thick chicken parts away from bone to at least 74°C and continue if needed before removing fully cooked pieces. Keep the broth hot.

Simmer and verify chicken: 2700 seconds

  3. Brown cooked chicken and keep it hot

Heat the remaining 2 tbsp ghee in a skillet over medium-high heat. Brown the verified cooked chicken about 3 minutes per side. Keep it hot at 60°C or above with clean equipment while rice starts; do not set it aside to cool on the counter.

  4. Measure 1200 ml broth and start rice

Rinse and soak rice according to its packet using separate water, then drain and discard that water. Strain chicken broth and measure exactly 1200 ml back into the pot, topping up only to that target with boiling water if short. Bloom 1 pinch saffron in the separate 30 ml rosewater. Boil measured broth and add drained rice; cook until liquid is at grain level.

  5. Steam with the separate infusion

Lower heat to minimum. Put hot browned chicken over rice and distribute all 30 ml saffron-rosewater evenly. Total measured rice liquid is 1200 + 30 = 1230 ml; at fourfold 4800 + 120 = 4920 ml. Cover with an ordinary non-airtight lid and steam about 20 minutes, until rice is fully tender and chicken remains at least 74°C in several centres. Continue cooking as needed.

  6. Serve promptly with care around bones

Remove whole loomi before eating and serve hot chicken and rice with clean tools. Warn diners about bones. Start portioning leftovers promptly rather than leaving the rice pot lukewarm during a long service.

  7. Refrigerate within one hour

Promptly divide leftovers into shallow containers and refrigerate within 1 hour at 4°C or colder. Do not wait for a deep pot to cool to room temperature. Use within 24 hours. These are conservative owner-selected household limits, not validated shelf life.
