Chebab
Emirati saffron and cardamom pancakes; 4 servings make approximately 6–8 pancakes.

35 min hands-on + 45 min rising · Total: 1 hr 20 min · 4 servings
Ingredients
- 250 g all-purpose wheat flour
- 5 g instant yeast
- 1 tsp ground cardamom
- date syrup, for serving (optional)
- cream cheese, for serving (optional)
- 25 g sugar
- 200 ml milk, warm
- 200 ml water, warm, total including saffron infusion — For 4 servings: 200 ml total water = 30 ml saffron infusion + 170 ml direct. For 16: 800 ml = 120 ml + 680 ml. Multiply both allocations by selected servings / 4; do not add extra infusion water.
- medium egg, beaten — 1
- 0.5 tsp ground turmeric
- 1 pinch saffron threads
- 0.25 tsp salt
- ghee or vegetable oil, for lightly greasing the pan (optional)
- honey, for serving (optional)
Instructions
Measure and infuse saffron
Measure all ingredients by weight or the stated units. Take 30 ml from the total 200 ml warm water and steep the saffron in it; the remaining 170 ml goes directly into the batter. At 16 servings, use 120 ml from the total 800 ml water and add the remaining 680 ml directly. This is not extra water. Use warm, not hot, liquids and follow the instant yeast package temperature guidance.
Mix the dry ingredients
Whisk the flour, sugar, instant yeast, cardamom, turmeric and salt together in a large mixing bowl until evenly combined. Keep the optional toppings separate.
Whisk the batter
Add the warm milk, remaining measured water, beaten egg and all the saffron infusion to the dry mixture. Whisk until smooth and thin, without dry flour pockets. Never taste raw batter: raw flour and eggs may carry pathogens. Wash hands, utensils and surfaces after handling raw egg or batter.
Ferment and control temperature
Cover the bowl and ferment in a warm, not hot, place for 30–45 minutes until bubbly. If cooking is delayed after this initial fermentation, cover and refrigerate at 4°C or below immediately. Chilling slows yeast activity and microbial growth; it does not sterilize batter or make mishandled batter safe. Count fermentation and cooking preparation within a maximum cumulative 2 hours outside refrigeration, or 1 hour above 32°C; discard batter exceeding that limit.
Ferment and control temperature: 2700 seconds
Heat the griddle and portion
Heat a nonstick griddle or skillet over medium heat. Lightly grease with optional ghee or oil. Pour in a ladle of batter and let it spread naturally into a circle, rather than spreading it into a thin crepe. Leave room to turn each pancake.
Cook the first side
Cook the first side over medium heat for about 1–2 minutes until bubbles pop, the edges set and the underside is golden. These are turning cues, not proof that the centre is cooked. Adjust the heat if the surface browns before the middle can set.
Cook the first side: 120 seconds
Flip and cook through
Flip and cook the second side over medium heat for about 1 minute, continuing as needed until the centre is completely set with no wet or runny raw batter. Check the thickest centre; general egg-dish guidance is 71°C (160°F). The reminder is a check time, not a guarantee of doneness.

Flip and cook through: 60 seconds
Repeat without warming all the batter
Repeat with the remaining batter over medium heat, keeping raw batter and cooked pancakes separate. After initial fermentation, keep excess batter covered at 4°C or below during a large batch and take out only what you can cook promptly. Do not leave the whole fourfold batch warm while cooking. The 1–2 minute first side and roughly 1 minute second side do not multiply with servings; total batch cooking takes longer.
Verify each pancake
Check every pancake before serving: the centre must be fully set and cooked through, with no wet, runny or raw batter. Continue cooking over medium heat in short intervals if necessary. Bubbles, colour and countdowns alone do not establish safety.

Serve and refrigerate leftovers
Serve warm with optional date syrup, honey or cream cheese. The master makes approximately 6–8 pancakes for 4 servings, not 4 pancakes; 16 servings make approximately 24–32 pancakes. Cool cooked leftovers promptly on a clean rack or in shallow containers, then refrigerate within 1 hour at 4°C or below for up to 2 days. Do not wait for a large stack to reach room temperature.
Tips
- For 4 servings: 200 ml total water = 30 ml saffron infusion + 170 ml direct. For 16: 800 ml = 120 ml + 680 ml. Multiply both allocations by selected servings / 4; do not add extra infusion water.
- Weigh sugar and instant yeast; spoon measures are not equivalent. For 2 servings, beat an egg and use half by weight.
- Allow 30–45 minutes for fermentation plus sequential griddle cooking. The 80-minute total is an estimate for the master, not a scaled guarantee.
Common mistakes
- Counting saffron water twice or treating 4 servings as 4 pancakes.
- Tasting raw batter, leaving the large bowl warm, or judging doneness only by bubbles and a timer.
Substitutions
- Optional ghee may be replaced by vegetable oil for greasing. This does not remove the milk and egg already in the batter.
- Choose any optional serving topping or omit all toppings. Check wheat/gluten, milk and egg allergens; cream cheese and ghee also contain milk.
Storage
Cool cooked pancakes promptly in shallow containers or on a clean rack and refrigerate within 1 hour at 4°C or below for up to 2 days. Do not wait for a large stack to reach room temperature. Refrigerate delayed or excess fermented batter immediately at 4°C or below; do not assume chilling rescues unsafe warm storage.
Reheating
Reheat refrigerated pancakes thoroughly to 74°C (165°F) at the centre before serving. A timer is not proof of temperature; avoid repeated warming and cooling.
