Roasted cauliflower coated in reduced fresh-tomato sauce in a deep oven-rated dish.

Preparation: 15 min · Cooking: 45 min · Total: 1 hr 20 min · 2 servings
Ingredients
- 400 g RAW cauliflower florets, approximately 3 cm
- 150 g RAW peeled onion, chopped
- 4 cloves Garlic cloves, peeled and minced
- 1 tsp Ground cumin, ALL on florets
- 400 g RAW FRESH tomatoes, blended for sauce
- 30 ml Olive oil TOTAL: 15 ml florets + 15 ml sauce
- 1 tsp Salt, ALL in sauce
Instructions
Preheat and select safe cookware
Preheat a conventional oven to 200°C. Use a suitably deep nonreactive oven-rated roasting dish for the sauce stage, not an overflowing shallow sheet. Follow its thermal-shock limits and never put a non-stovetop-rated dish on a burner.
Prepare raw vegetables and split oil
Wash 400 g raw cauliflower and cut about 3 cm florets. Blend all 400 g FRESH RAW tomatoes for sauce. Chop 150 g peeled onion and 4 garlic cloves. Divide 30 ml oil into 15 ml for florets and 15 ml for sauce; all cumin goes on florets, all salt in sauce.
Roast florets lightly
Coat florets with their 15 ml oil and all 1 tsp cumin. Spread in one layer and roast at 200°C, checking from 15 minutes until lightly browned, not burned. Use oven mitts and keep the hot dish on a heatproof support.

Make fresh tomato sauce
In a separate stovetop-rated pan, soften onion and garlic in the remaining 15 ml oil over medium heat, checking from 4 minutes. Add all blended raw tomatoes and 1 tsp salt. Simmer from 10 minutes until reduced and thickened, without promising a final 400 g cooked sauce yield.
Coat with the hot sauce
Pour the hot sauce over the roasted florets in the deep oven-rated dish, respecting cookware thermal-shock instructions. Coat evenly; do not demand complete liquid submersion or add unlisted water to meet that visual rule.
Distribute in a comparable layer
Distribute sauce between florets in a shallow food layer within the deep-sided dish. For 8 servings use comparable-depth dishes rather than one deep heap. Do not add legacy chickpeas, almonds or allspice.
Bake until stems are tender
Return to the 200°C oven and check from 20 minutes until stems are fork-tender and sauce is hot and bubbling. Extend as needed without burning the edges. Keep temperature and food depth fixed when scaling, not a multiplied cooking time.
Sauced cauliflower bake first check: 1200 seconds
Check and serve safely
Check several thick stems with a fork; they must be tender, not hard. Lift the hot dish with oven mitts and serve with clean utensils at a safe eating temperature. Flatbread is separate, not a hidden ingredient.
Cool shallow portions promptly
Move leftovers into shallow containers promptly and refrigerate at 4°C or colder within 2 hours, or 1 hour above 32°C. Use within 2 days and reheat only once to 74°C throughout; do not leave the deep hot roasting dish cooling on the counter.
Tips
- Base quantities make 2 catalogue servings. For 1 serving halve every measured ingredient and process-water quantity; for 8 multiply by 4. Cup = 240 ml, tbsp = 15 ml, tsp = 5 ml. Keep temperatures, piece thickness and vessel depth fixed; use comparable base-size batches instead of multiplying cooking times. Timers mark first checks, not guaranteed doneness. Follow product cooking and allergen labels.
Common mistakes
- Do not rely on a fixed timer or surface colour alone. Preserve measured partitions and use the stated doneness checks.
Substitutions
- Use the specified food states and equipment. Reconcile another product before changing quantities or method; check every blend and prepared-component allergen label.
Storage
Refrigerate promptly in shallow portions at 4°C or colder, within 2 hours (1 hour above 32°C). Use within 2 days or the earlier component/label deadline. Do not leave the pot cooling on the counter.
Reheating
Reheat only once to 74°C throughout, stirring where possible. Discard temperature-abused food; reheating does not make it safe again.
