Palestinian Bulgur Rashoof
Tender bulgur and brown lentils combined with pasteurized cultured buttermilk.

Preparation: 15 min · Cooking: 45 min · Total: 1 hr 10 min · 2 servings
Ingredients
- 100 g DRY coarse bulgur
- 50 g DRY brown lentils
- 150 g RAW peeled onion, finely chopped
- 400 ml Commercially pasteurized CULTURED BUTTERMILK
- 30 ml Extra virgin olive oil, ALL for onions
- 0.5 tsp Ground cumin
- 0.5 tsp Salt, total measured allowance
- 480 ml Initial lentil/grain cooking water; partly absorbed, excess drained
- 250 ml Separate lentil/grain rinse water, discarded
- 100 ml Hot grain-cooking water reserve, maximum (optional)
Instructions
Rinse grains and select the dairy
Sort and rinse 50 g dry brown lentils and 100 g dry coarse bulgur using the separate 250 ml rinse allowance; discard it. Use commercially pasteurized cultured buttermilk, not unmeasured diluted yogurt or dry Jameed. Keep dairy at 4°C or colder until needed.
Measure cooking water and onion oil
Measure 480 ml initial grain-cooking water and keep the optional 100 ml hot reserve separate. All 30 ml olive oil belongs to the onion pan; no extra onion oil is assumed. Finely chop the 150 g peeled onion.
Cook lentils before acidic dairy
Simmer brown lentils in 480 ml water, checking from 20 minutes until almost tender. Add only measured reserve if needed to avoid drying. Do not add acidic buttermilk yet; it can delay pulse softening. These are brown lentils, not kidney beans.
Lentil first tenderness check: 1200 seconds
Cook both grains fully tender
Add bulgur once lentils are almost tender. Continue gentle cooking from a 10-minute first check until BOTH are fully tender, using only the remaining capped reserve if needed. Only then drain excess free cooking water; part of the initial water is absorbed, not all discarded.
Bulgur and lentil first check: 600 seconds
Combine gently with buttermilk
Warm all 400 ml cultured buttermilk gently in a separate pan. Gradually combine with hot tender grains while stirring. Heat the combined dish through to the selected 74°C without scorching or a hard boil. Stirring in one direction does not guarantee no separation.
Brown the measured onion topping
Cook onion in ALL 30 ml olive oil over medium-low heat. Check from 7 minutes and extend until golden, not burned. Stir in cumin and salt briefly, then add the onions and their measured oil to the hot grain mixture.
Onion browning first check: 420 seconds
Check heat and tenderness
Check the combined dish to 74°C and confirm lentils and bulgur are fully tender, not chalky. Adjust only with cooking liquid already retained in the measured formula, not extra diluted dairy. Serve promptly.
Refrigerate promptly
Refrigerate shallow leftovers promptly at 4°C or colder and use within 2 days. This is the Palestinian bulgur-and-buttermilk master; the independent Jordanian Rashouf is not changed. Contains wheat and milk.
Tips
- Base quantities make 2 catalogue servings. For 1 serving halve every measured ingredient and process-water quantity; for 8 multiply by 4. Cup = 240 ml, tbsp = 15 ml, tsp = 5 ml. Keep temperatures, piece thickness and vessel depth fixed; use comparable base-size batches instead of multiplying cooking times. Timers mark first checks, not guaranteed doneness. Follow product cooking and allergen labels.
Common mistakes
- Do not rely on a fixed timer or surface colour alone. Preserve measured partitions and use the stated doneness checks.
Substitutions
- Use the specified food states and equipment. Reconcile another product before changing quantities or method; check every blend and prepared-component allergen label.
Storage
Refrigerate promptly in shallow portions at 4°C or colder, within 2 hours (1 hour above 32°C). Use within 2 days or the earlier component/label deadline. Do not leave the pot cooling on the counter.
Reheating
Reheat only once to 74°C throughout, stirring where possible. Discard temperature-abused food; reheating does not make it safe again.
