Azerbaijani Black Tea with Saffron

  1. Measure tea and flavourings

    Measure 4 tsp loose black tea, 1 litre drinking water and 0.05 g saffron threads. Wash four thin lemon slices and remove their seeds. Measure up to 20 g sugar if you would like the tea sweet.

  2. Boil water and infuse saffron

    Bring the 1 litre water to a full boil (about 100°C) in a kettle or saucepan. Remove from the heat, add the 0.05 g saffron threads, cover and infuse for 3 minutes until the water turns pale gold. Do not boil the saffron for those 3 minutes.

    The infused water is pale gold.

  3. Steep the black tea

    Put the 4 tsp black tea in a heatproof teapot and pour the hot saffron water over it. Cover and steep for 3 minutes. Taste a cooled spoonful; for stronger tea steep up to 5 minutes total, then strain before it becomes harsh.

  4. Strain and sweeten if desired

    Strain the tea through a fine sieve into a second heatproof jug; discard the tea leaves and saffron threads. If using the optional sugar, stir in up to 20 g until fully dissolved.

    No leaves or threads remain; any sugar has dissolved.

  5. Serve warm with lemon

    Pour the strained tea into four heatproof cups. Add one seedless lemon slice per cup and let the tea cool to a comfortable drinking temperature. Cool leftovers promptly, cover and refrigerate at 4°C or below for up to 24 hours; rewarm once if desired.
