Instructions

  1. Check labels and measure

Check that the whole wheat flour is commercially treated and explicitly labelled ready-to-eat before preparing six small portions. Ordinary raw flour is not suitable for this method; do not try to make it ready-to-eat by home heat treatment. Measure the dates, flour, ghee, cardamom and ginger; keep any optional sesame or walnuts separate.

  2. Prepare dates and melt ghee

Check the soft dates for remaining pits and chop them finely, or use ready-to-eat date paste. Melt the measured ghee gently over low heat until just liquid, then take it off the heat. Set out a clean bowl, sieve, spoon and shallow tray.

  3. Toast the ready-to-eat flour for flavour

Put the commercially treated ready-to-eat flour in a dry pan over medium-low heat. Stir continuously for about 5–7 minutes until light golden with a nutty aroma, taking it off sooner if it starts to scorch. This is for flavour only: colour, aroma and the timer do not demonstrate pathogen destruction.

Check the flavour toast: 420 seconds

  4. Sift and take off the heat

Turn off the heat and sift the warm toasted flour into the clean mixing bowl to remove lumps. Handle the hot pan and sieve with suitable heat protection. No raw flour is added at this or any later stage.

  5. Combine with dates and spices

Add the prepared dates, warm melted ghee, ground cardamom and ginger to the warm flour off the heat. Use a sturdy spoon to press and fold until the flour is evenly absorbed into a uniform crumbly mixture with no dry pockets. Do not knead the hot mixture with your hands.

  6. Cool before hand-shaping

Spread the mixture on the clean shallow tray and let it cool until fully cooled and comfortable to touch before hand-shaping. Do not leave it out waiting indefinitely: refrigerate promptly, within 2 hours of preparation, or within 1 hour above 32°C. For a larger batch, divide between shallow trays to help it cool evenly.

  7. Knead and choose a coating

With clean hands, knead the cooled mixture until evenly combined, then press it into moulds or form bite-sized balls. Alternatively, leave it as a loose crumble. If desired, roll in the optional toasted sesame seeds or chopped walnuts; both coatings can be omitted.

The cooled mixture is evenly crumbly with no pockets of dry flour and presses together when shaped; this texture is not a microbiological safety test.

  8. Portion, serve and refrigerate

Divide into six small portions and serve with Arabic coffee if desired. Put the remaining Batheetha in an airtight container in the refrigerator at 4°C or below. Use within 3 days as a conservative household limit, or sooner if an ingredient label requires it; this is not a validated shelf-life or a weeks-long room-temperature storage claim.

Storage

Keep airtight at 4°C or below. Refrigerate promptly in shallow portions within 2 hours of preparation (1 hour above 32°C). Use within 3 days as a conservative household limit, or sooner if package instructions require; shelf-life has not been validated.

Reheating

No reheating is required. Serve chilled or let only the portion being served soften briefly, keeping the remainder refrigerated and counting all time out of refrigeration toward the storage limit.
